With this end of summer in Cape Town being colder than usual, I decided to serve one of my favourite fruits, watermelon, baked. Fish goes well with something sweet. A great example of this is that snoek is traditionally served with moskonfyt (grape jam). For this reason I decided to combine the baked watermelon with kingklip. I am of the opinion that any white fish will go well with the baked watermelon.
This is a very easy dish to prepare. I seasoned the fish with za’atar, but you can also season the fish with a fish seasoning.
