Nothing makes me and my family happier than eating dessert in the middle of the week! It brings the holiday feeling back.

Although the holiday season is over, one thing that is far from over is summer. Summer means we can eat al fresco and we have access to beautiful summer fruit.

This dessert is very quick and easy to make. I used fresh peaches but it can be replaced with berries or pears or any fruit that you would like to experiment with.

Chocolate Fondant pudding and Magnum Pints

Today is International chocolate day and a month ago, on the 7th of June was International Chocolate ice cream day. If you required an excuse to indulge in chocolate and chocolate ice cream, you now have one.

 

Ola Magnum recently released their new Magnum pints and I am totally in love with the chocolate and raspberry flavour.

 

These chocolate fondant puddings with a raspberry centre was inspired by the Ola Magnum chocolate and raspberry pint. Serve it on its own or for some extra decadence, with a scoop of the ice-cream.

Gnocchi with a nutty sauce

This gnocchi with a nutty sauce is a perfect vegetarian dish to serve on Meatless Mondays. The nutty sauce is based on a recipe by the late Sannie Smit. It can be served with pasta, if preferred. The sauce is quick and easy to prepare.

Although it is very satisfying to make your own gnocchi, it is definitely not easy to do. I have made lots of inedible batches of gnocchi even though I always use the same recipe. If you do not feel brave enough to prepare your own gnocchi, you can buy prepared gnocchi at most supermarkets.

Sweet Potato and Coriander soup

This spicy sweet potato and coriander soup is a perfect dish to prepare during weekdays, as it can be prepared in less than thirty minutes. It keeps very well in the fridge, so it is a great dish to have on hand to feed hungry children at lunch time.

It is also a great dish to serve on Meatless Mondays or as a starter or mains for those that are vegetarians.

Soup is always a great dish to serve in winter and you can “hide” the vegetables from children that might not be so keen to eat them! ;)

Smokey beef casserole

When cheaper cuts of meat are cooked correctly, you will often get more flavourful and tasty dishes in comparison with more expensive cuts.

My Mother cooked wonderful casseroles and soups using stewing beef meat. The meat requires a long slow cooking time unless you want to eat something that tastes like the sole of an old shoe.

This smokey beef casserole can be prepared a day or two in advance and will taste even better when re-heated. It is perfect comfort food for the winter. Serve it with a glass or two of red wine, and see how faces transform into joy!

Chicken Pilaf

A pilaf can be a side dish of rice cooked in stock or it can be a wonderful one-pot meal with either vegetables for a vegetarian dish or it can include meat for the carnivores.

This chicken pilaf recipe is delicately spiced and is really one of the best pilaffs that I have ever tasted. The spices are very subtle and the sultanas add just a little bit of sweetness to the dish with the roasted almonds adding some crunch. Make sure that you do not overcook the dish; the rice must still be firm and should not cling together.

Chicken pilaff is a delicious dish to serve in winter. Because it is simple and quick to prepare it is an ideal dish to make during weekdays. It is, however, also stylish enough to serve when entertaining. Chicken and rice are not expensive, so you can feed a large amount of people on a relatively small budget.

Everyone is familiar with bread and butter pudding. I only started making this in the last four years and my favourite is definitely one using hot-cross buns.

Not many people I know make savoury bread puddings. It is a versatile dish that is made with ingredients that is available in most kitchens. You can try different flavour combinations, such as ratatouille and mozzarella cheese or bacon and cheddar cheese. The bacon combination will be a great dish to serve for breakfast.
