Pork Sausage rolls with Truffle mustard

When you had a day like I had yesterday, you need comfort food to make you feel like everything is going to be okay. I know that this is perhaps a bad thing to do as food shouldn’t be used to make you feel better (or so says dieticians and psychologists) but for me, food is sometimes the only comfort I need (which is probably why I’ve struggled with my weight all my life). Food, and the right food at that, has the ability of soothing away your heart aches and putting a smile on your face when nothing or no-one else can. Or is that just me?
These sausage rolls are not your average, corner shop version! I decided to use good quality herby pork sausages, fat and plump with flavour that can knock your socks off! I also decided to use my latest food fetish, Truffle Mustard. I have always loved mustards in all ways, shapes and forms but Truffle Mustard, in my opinion, is the King of all mustards. I’ve had a love affair with Dijon for quite some time now but when I saw a bottle of Truffle mustard at the Food Lover’s Market when I was shopping there last week, I knew I had to try it. The moment I opened the bottle, the fragrance of truffles wafted up my nose and I started salivating (charming, I know!). The taste is something I almost can’t describe as I never thought that truffles and mustard would go so incredibly well together. I love the gentle flavour the truffles lend the otherwise sharp mustard and now, a week later, my jar of mustard is almost finished as I’ve added it to anything and everything over the last week. Salads have gone from ordinary to extraordinary, sandwiches have gotten an extra lift and these sausage rolls were out-of-this-world delicious because of Truffle Mustard. (Can you tell I love it?)
Because there this recipe only calls for four ingredients, try to get the best quality ingredients as possible. The sausage rolls just won’t be as good with average, pasty sausages and cheap puff pastry. If you are lucky enough to have a butcher who makes pork sausages, ask them to add some herbs to the mixture and to make them extra plump. Alternatively, try Woolworths. I’ve tried their new range of pork sausages and they really are delicious. As far as the puff pastry goes, try to use all-butter puff pastry. I know it’s more expensive but it really is worth it! And if you don’t want to use only truffle mustard, mix it with some Dijon or if you can’t find truffle mustard, use a mixture of wholegrain and Dijon mustards.
