World Egg Day : Egg Recipes

As today is World Egg day, I decided to round up all my favourite Simply Delicious Egg recipes and share them with you. I adore cooking with eggs as they are incredibly nutritious and when cooked right, they are one of the most delicious things to eat. Silky, soft and almost cheese-sauce like, like Julie Powell said in “Julie & Julia”. I love them on their own, with asparagus and hollandaise, on a soft roll with bacon or on top of a stack of crunchy potato rosti’s. For breakfast, lunch and dinner. And so, here are my favourites from the blog. All simple. All delicious!
Poached eggs with asparagus & hollandaise sauce.
The ultimate creamy mushrooms with fried eggs.
Steak & Egg with herbed chilli butter.
Eggs Benedict with Smoked Salmon.
Bacon & Egg rolls with chilli & almond pesto.

I WANT EGG….. Oh wow… or do a creamed spinach on Ciabatta with a poached egg and some hollandaise… Veggie Benedict… Numm…

Thank you for your divine recipes. So easy to make with GOOD ingredients and FRESH FREE RANGE EGGS which l am lucky enough to get every day from my lovely hens in my back garden.
One meal you omitted which is worthy of a mention is HADDOCK WITH POACHED EGGS AND WHITE PARSLEY SAUCE. Providing you use only good haddock loins, butter, cream and fresh parsley, it’s a fab dish to serve for a brunch. The best poached eggs are done in almost boiling water in a shallow frying pan with a drop of vinegar NOT a special poached egg pan with cups! I also only use white pepper for this dish and when l poach the fish in milk and cream with a bay leaf, l use the same mix for the sauce. ENJOY
