I was experimenting with different flavours in the kitchen especially when it comes to pasta, cause i really love pasta and always come up with new and delicious flavours and recently i came up with this recipe and is delicious.

Ingredients:

  • 1 Packet of Penne Pasta (cook as per instructions)
  • Packet of rocket
  • pine kernels
  • garlic
  • capers
  • Olive oil
  • white wine vinegar (just a dash)
  • Salt and pepper
  • Grated parmesan cheese
  • 500g Chicken breast cut up in squares
  • Red pepper
  • red onion

In a electric blender place rocket, pine kernels, garlic and capers and pulse. Put blender on slow and slowly add your olive oil. (Use your discretion with all these ingredients) Add the dash of vinegar, mix and allow to rest.

In a frying pan put an small drop of olive oil and fry onion and pepper. Add chicken and cook thru.

Add chicken mixture to cooked pasta and mix slowly. Take Pesto mixture and add slowly until all pasta is covered. Add Parmesan cheese and mix in. Serve with some roast veggies and toasted ciabatta rubbed with some garlic.
