VEGETARIAN CURRY – BUTTERNUT AND BEAN

Im not sure if this is technically a curry as I just added things as I went along and Im not sure on what exactly constitutes a dish being called a curry. But this dish is both flavour filled and burny = so we called it a curry in our household.

Of course if you don’t want the burn you can add less chilli/ cayenne pepper and less ginger.

These pictures were taken the day after I made it. So we had eaten 2 adults and one kids portion out of the dish already – so what you are seeing is half of the amount the dish makes.

VEGETABLE CAKES / PATTIES

We all like to eat healthier. I know I feel much better when consuming more vegetables and less junk. These are a vegetarian’s dream with great flavour and so easy to make.

This recipe is more of a guideline and something I make often for my family.
These vegetable cakes/patties pair well with salad and go great with some fried egg and avo on top.
They make great lunch box snacks if you have any left over.
Would go great at a party – make tiny ones and top with cream cheese.
Substitute out any vegetables you like or have on hand.

They really are super easy and delicious

*This is a rough guide and you will need to judge and feel if you need to add more flour to make the right consistency

CHOCOLATE CREME BRULEE

Anyone who knows me or even follows me on facebook or twitter will know that I love 2 things: Coffee and Chocolate!!

So a few weeks ago I received this very cool parcel in the post… I mean who doesn’t like receiving parcels (mail is so cool) and when my parcel happened to be a box filled with chocolate I just knew my year was off to a GREAT start!!!


My parcel was from America – how cool.
These guys in Santa Barbara in America had read my blog and thought it was worthy of sending me some chocolate to try out. (Thank you)

So the first thing I made was chocolate mousse – YUM! then I made chocolate cream brulee.
Of course I ate handfuls of chocolate inbetween.

GLUTEN-FREE CRACKERS

To someone who can’t eat gluten cheese and crackers can be a bore with light, airy and tasteless rice cakes from the store. Sure rice cakes have their place for convenience but eating REAL crackers is so much better tasting and crunchy too.

My daughter is so thrilled with these and I am too. They take some turning and watching in the oven to make sure you get them nice and crispy without burning but they are worth the effort.
If stored in a airtight container they may need to be crisped up in the oven to get their crunchy-ness back, but even when chewy they are still a great tasting and a nice snack

BAKED SWEET POTATO CHOCOLATE CAKE (GLUTEN FREE)

I wanted to bake a “healthy” chocolate cake and in cases like that I usually make a Beetroot chocolate cake. But on this very day I didn’t have any beetroot in my fridge and so with some tweaking and hoping and substituting this cake was born – Baked Sweet Potato Chocolate Cake.

You know what – it turned out better than my beetroot version … and so this is the NEW chocolate cake in our house! It is softer and sweeter – even though the same amount of sugar is used. This is because the sweet potato is baked in the oven till caramelized on the edges and it is naturally sweet.

Not to say the beetroot chocolate cake is no longer good enough, if I can’t get sweet potatoes then it will be back on the menu shortly but this cake has really stolen the show.

THE BEST BAKED APPLES

I know saying the BEST of anything is a tall claim. You see I’m not a baked fruit kind of person. I am more of a cold desserts kind of girl – you know anything containing chocolate, cold and custardy, or mousse, or creme brulee or anything creamy.
The husband is the reason I make anything baked for pudding – like this baked plums or baked cookie dough apple pie.
But this time its all me!
I keep making these and actually loving them… usually baked fruit is eaten by me slowly and its ok! but not anymore – this dish keeps being made over and over and I just can’t stop!
I think I may take some left over baked apples and try to make a baked apple ice cream!!! (but thats if there is any over!)

CHOCOLATE MOUSSE ICE CREAM

We have cut down considerably on dairy but this week I had an incredible dessert craving…
something smooth and chocolatey. I wanted chocolate mousse or pudding or cold chocolate-something!

I have been using coconut milk and frozen bananas as a substitute in baking for milk and dairy but this time I just couldn’t do it! I had to have cream and chocolate! So I started by making a chocolate pudding of sorts and then decided to freeze some of it in individual little cups for dessert. It was so yummy that the remainder that was in the fridge had to be turned into ice cream.

BUT I worried that if I put the mix in the ice cream maker that I wouldn’t be able to share the ice cream that came out as  the amount was a little and SO YUMMY! (I wanted to gobble it ALL up) So I added a cup of milk and mixed it all together before putting it into the ice cream maker:) It was now a little less chocolatey but still so delicious. So its your choice whether you want a stronger chocolate taste or a bigger batch of ice cream. You could also not add the extra milk and leave it in the fridge – it sets to a gorgeous velvety pudding! soooo good!

I am no Olive connoisseur, in fact I don’t really like them (shock, horror) But my kid loves them! So when I came across fresh olives still in there raw state at the Earth Fair market (farmers market) the lovely stall holder insisted I should buy some fresh olives and make some olives at home. I was perplexed and said I didn’t know how and don’t really eat them but the lovely lady assured me that it was very simple and easy to do. She talked me through the process and handed me a recipe with my purchase of a bag of kalamata olives.

I was skeptical that it could be that easy but also trusted the lady opinion so with some hope I headed home to soak my olives and wait and see after 6 weeks if she was right. This is how I did them… apparently the results are good.

DAIRY-FREE POTATO BAKE

One of my all-time favorite dishes to eat is a homemade potato bake creamy and rich and filled with flavour. No packet sauce, just home peeled and thinly sliced potatoes cooked with butter and cream and some friendly onion and mushroom in-between. I make it often and especially when I want comfort food. But when we decided to cut out as much dairy as possible I sadly knew I would have to say goodbye to my potato bake that I loved so much … I mean it has butter and cream in it! Anyway after much fretting I decided to try my hand at making a dairy-free potato bake *Drum roll please* And it worked! YAY! We now eat this yummy dish with no remorse or regret. I love it so much I don’t even miss my other creamy dish I used to make (deadly serious and no lies promise)
