VEGETARIAN CURRY – BUTTERNUT AND BEAN

Im not sure if this is technically a curry as I just added things as I went along and Im not sure on what exactly constitutes a dish being called a curry. But this dish is both flavour filled and burny = so we called it a curry in our household.

Of course if you don’t want the burn you can add less chilli/ cayenne pepper and less ginger.

These pictures were taken the day after I made it. So we had eaten 2 adults and one kids portion out of the dish already – so what you are seeing is half of the amount the dish makes.

VEGETABLE CAKES / PATTIES

We all like to eat healthier. I know I feel much better when consuming more vegetables and less junk. These are a vegetarian’s dream with great flavour and so easy to make.

This recipe is more of a guideline and something I make often for my family.
These vegetable cakes/patties pair well with salad and go great with some fried egg and avo on top.
They make great lunch box snacks if you have any left over.
Would go great at a party – make tiny ones and top with cream cheese.
Substitute out any vegetables you like or have on hand.

They really are super easy and delicious

*This is a rough guide and you will need to judge and feel if you need to add more flour to make the right consistency

BAKED SWEET POTATO CHOCOLATE CAKE (GLUTEN FREE)

I wanted to bake a “healthy” chocolate cake and in cases like that I usually make a Beetroot chocolate cake. But on this very day I didn’t have any beetroot in my fridge and so with some tweaking and hoping and substituting this cake was born – Baked Sweet Potato Chocolate Cake.

You know what – it turned out better than my beetroot version … and so this is the NEW chocolate cake in our house! It is softer and sweeter – even though the same amount of sugar is used. This is because the sweet potato is baked in the oven till caramelized on the edges and it is naturally sweet.

Not to say the beetroot chocolate cake is no longer good enough, if I can’t get sweet potatoes then it will be back on the menu shortly but this cake has really stolen the show.

THE BEST BAKED APPLES

I know saying the BEST of anything is a tall claim. You see I’m not a baked fruit kind of person. I am more of a cold desserts kind of girl – you know anything containing chocolate, cold and custardy, or mousse, or creme brulee or anything creamy.
The husband is the reason I make anything baked for pudding – like this baked plums or baked cookie dough apple pie.
But this time its all me!
I keep making these and actually loving them… usually baked fruit is eaten by me slowly and its ok! but not anymore – this dish keeps being made over and over and I just can’t stop!
I think I may take some left over baked apples and try to make a baked apple ice cream!!! (but thats if there is any over!)

DAIRY-FREE POTATO BAKE

One of my all-time favorite dishes to eat is a homemade potato bake creamy and rich and filled with flavour. No packet sauce, just home peeled and thinly sliced potatoes cooked with butter and cream and some friendly onion and mushroom in-between. I make it often and especially when I want comfort food. But when we decided to cut out as much dairy as possible I sadly knew I would have to say goodbye to my potato bake that I loved so much … I mean it has butter and cream in it! Anyway after much fretting I decided to try my hand at making a dairy-free potato bake *Drum roll please* And it worked! YAY! We now eat this yummy dish with no remorse or regret. I love it so much I don’t even miss my other creamy dish I used to make (deadly serious and no lies promise)

MEATLESS SPAGHETTI BOLOGNESE… VEGETARIAN

With the colder weather approaching the need to each comforting bowls of warmth has drastically grown!
I then realized that our move to eating meat free and mostly animal product free too that I would have to come up with a dish to replace my usual spaghetti bolognese  I used to make  (filled with mince etc).  I can confidently say that we are 97% vegetarian and indulge in meat maybe once a month. (yay us! ;)
Replacing the meat with good quality mushrooms worked beautifully and I still got my lovely tomato pasta fix I wanted.

Autumn has been particularly beautiful this year and I couldn’t help but photograph the leaves :) the seasons are changing fast and the cold is setting in!

MOIST CARROT CAKE WITH LEMON CREAM CHEESE ICING

I found this recipe on Nook eatery’s website and immediately after changing some things and making it I wanted to share it with everyone. But I have a no stealing recipes policy and so I immediately emailed Jessica from Nook Eatery and said to her I wanted to write a blog post and share my version of the recipe (gluten-free and other tweaks). Jessica was very kind and said sure :) she is lovely, isn’t she?
So thanks to Nook Eatery and Jessica for allowing me to take their recipe, turn it upside down and make it my own and share it with you. Some bloggers would argue that I had changed it enough that it could be my recipe now but I got the idea from reading their website and from their recipe – so give credit where credit is due. The bones of the recipe is definitely theirs – but when serving it to family and friends I will claim I made it (baked it) so I get the credit ;)

This carrot cake is incredibly moist and was still moist 4 – 5 days later, so its a great cake for a party or dessert that you can make ahead and keep (especially if you have lots to prepare – the more you can get done in advance the better)
Even though I made the sugar less in this recipe next time I will add even less as I thought it was still to sweet.

HOW TO PLAN A BUDGET FRIENDLY PARTY

Everyone wants to give their child or someone special in their life a beautiful birthday party. But if you have tried to plan one you will know how much it can ALL add up… and quickly!
Just cause you have a budget doesn’t mean your party won’t be fabulously stylish and fun.

Here are a few tips I use when planning a party or get together. 

BAKING / FOOD
Bake things that go far but don’t cost very much like

  • Meringues which require 2 eggs and 100grams of sugar to make roughly 12 – 15 meringues.
  • Jelly/jello – you can use fresh fruit juice and gelatine place in molds and they look super cute when molded into shapes.
  • Fresh fruit chopped up into cubes and then threaded onto kebab sticks. (seasonal fruit would be cheapest and healthy)
  • scones – bake a big pile and place on a pretty plate then place beaten fresh cream, butter and 1 or more types of jams nearby in cute bowls for people to help themselves.
  • Potato wedges – take fresh potatoes rinse and slice up and cover with olive oil and sprinkle with salt and roast in the oven until tender and crispy – serve in jars or teacups and servewith sauce



EXTRA TIP* Make a lot of one or two things instead of having a bit of this and that as most people like to try everything. Rather they can have their fill on something than you run out of somethings making you look like you under catered.

GAMES VS ENTERTAINMENT
Playing games instead of hiring entertainment! For kiddies there are games like:

  • Pass the parcel
  • scavenger hunt
  • dunking for apples
  • hide and seek
  • statues

ICED COFFEE MILKSHAKE

ICED COFFEE MILKSHAKE

 
What do you do when you REALLY want a cup of coffee but you have NO milk in the house? After a few minutes of sulking and wandering if I could put yoghurt in my coffee – Ewww! I eventually reached for the jar of my home made vanilla ice cream in the freezer and mixed some with my coffee. Results = Yumminess and even better than regular coffee!

Found 2 of these Milk stream glasses at a vintage store and I couldn’t resist. They remind me of when I was young and my grand father used to have a soda stream machine, he would make us our own cool drinks in little glass soda stream bottles.
Not sure when they launched a milk stream? but they are pretty and vintage and I just like them. perfect for milkshakes.
