I cook this meal at least once a week, this is my all time favorite winter “diet” curry.  Curry is such a wonderful thing, it fills you up and warms your heart. I’m always amazed at how all the spicy flavors come together to form something so magic and spectacular in your mouth.

Instead of having this with rice I rather choose healthier form of  starch such as starchy vegtables in the form of baby potatoes (lower GI than your ordinary potato) and Sweet potato that goes fantastic with the curry. The butternut gives body to the sauce without adding much of anything else to thicken it with.

You will simply not believe what a quick and filling meal this is. Please do yourself a favor and invest in spice tin. I can simply not make a decient curry without it.

Spices

I use Chicken breast and drumsticks but remove the skin and all visible fat before cooking, also important to stick to the portion sizes. Nowadays I only cook the portion we are suppose to have unless I cook double for lunch the next day. Beside the obvious benefits of not over indulging you also save a lot more money because there is no food going to waste.

Yip, because we don’t really ”give it to the dogs” we rather have second portions “because we are hungry and work was horrible today and it’s cold and blah blah blah lipstick”. Sometimes it’s too much effort to give that 1/2 cup of rice that’s left over to the dog anyway so you rather chuck it in the bin…been there done that! No more!

Feel better soon Chicken Soup

Can Chicken soup cure a common cold or flu? I don’t know, what I do know is that it really makes you feel better! Chicken soup is comfort food it heats you right up from the inside, sooth all aces and pains and simply just lift your spirits. I wonder if anyone had Chicken soup to mend a broken heart, Neh just a thought I believe Ice cream still works for that!

So what is your comfort food when live don’t look so bright?

There is a first time for everything….even green Asparagus.

Yes I know! How is it possible that I’ve never eaten green Asparagus yet I love white Asparagus spears so much.

When we just got married (many, many moons ago) I tried to cook green Asparagus and it tasted horrible, I thought it was just the Asparagus that tasted bad, off course way back than I wasn’t able to cook an egg properly either. :)

Don’t be fooled,  the actual star of this meal is the Sticky Soy, Honey and Sesame Chicken Wings served with a potato Rosti.

“Braai tart” – Polenta, Mushroom and Bacon tart

Polenta, mushroom and bacon tart

Like every other Saturday my husband have the urge to “braai”. This ritual starts in Spring and continues well into the winter. Yip that’s my hubby! , facing the icy cold winters of the Highveld armed with his beanie, winter jacket and a scarf and his bottle of mixed spices turning ordinary lamb chops into succulent little dreams.

Unfortunately the side dishes is not his forte’, instead he likes to order me around. His favorite would be “pap tert” (a maize meal tart).

I decided it is about time that we jazz up the old maize tart a bit, you know, making it a bit more sophisticated, so instead of using ordinary maize meal in boring layers I used Polenta instead.

To all the vegetarians out there, feel free to remove the bacon from this recipe, I would’ve but my husband is a carnivore and he tends to get a bit grumpy if there is no extra meat in a savory tart!

Phew! I’ts been more than a week since my last post.

I’m exhausted, emotionally unstable (blame it on the full moon), I don’t have an appetite (sorry can’t cook if I’m not hungry) and besides that I just can’t seem to get ahead of my workload….

Anyway, I’ve discovered a bottle of Robertson’s spice for rice in the back of my grocery cupboard and thought I should make some spicy rice to go with the Rosemary Kofta’s.

If you don’t have spice for rice you could simply add 3 ml turmeric and 2,5 ml chilli powder to your rice while cooking.

On days like these I  make my cous-cous beef strip salad. Not only is it  packed with goodness it is also quick and easy to make, and by quick I mean 30 minutes.

Home made tomato sauce

Do you have any idea how good home-made tomato ketchup can be!

I’m an advent fan of Jamie Oliver’s cooking.  I mean what is not the like, the bloke is funny, charming, good-looking and he can cook! (I still love Gordon Ramsay more but that’s mainly for my weird obsession with the man…I find him strangely attractive).

Jamie always impress with his home-made recipes and this Tomato ketchup is one of them.

The only ingredient I couldn’t find was a fennel bulb (countryside, do I need to explain!). Off course it is virtually impossible for me to follow a recipe so I did add 40 g of tomato puree right at the end where you cook the sauce before pouring it into your bottles, use it don’t use it.
