Anchovies are one of my favourite things.  Perhaps because of the intense saltiness, I love to eat them straight out of the jar.  I add them to sauces becuase they melt away leaving behind a fabulous flavour.

What I love about these is they have everything going on.  The raw and the cooked, the crispy and the soft, the creamy, the salty and the fresh.
