oat & honey waffles with caramalised apples

I have been asked to develop a few recipes using the new Kellogg’s Special K Oats & Honey variant and thought to add it to waffles. It gives them a lovely whole-wheat flavour, and turns them into a delicious breakfast treat.

Waffles definitely need a topping, and these caramelised apples work nicely. If  however you prefer a healthier option, simply poach apples (or pears) in water or fruit juice (about 1/2 cup) until cooked through. Fresh slices of  fruit such as banana are also fabulous, as well as berries.

Serve with fat-free yoghurt or a drizzle of maple syrup or honey.

Waffle recipe on Drizzle and Dip

Caramelised apple recipe: (enough to top 4 waffles)

  • 2 apples cored, quartered and then sliced into 8 – 12 wedges
  • 1 T butter
  • 3 T brown sugar

Heat the butter in a small pot over a medium heat add the apples and allow to cook with for about 4 minutes stirring regularly. Add the sugar and allow this to become a caramel in the butter and continue to cook the apples until they soften and start to brown. Remove from the heat and serve these warm on top of the waffles.
