Italian (tongue-in-cheek) Sushi …. Fusion or Confusione!!!

Ok, I am in one of those loony tune moods. I think the wind we are suffering here in eThekwini has finally blown my away! Seeing as it’s summer now – or supposed to be, I have switched from my beach walk in the mornings to swimming. For the last 3 years Karen and I have done laps in the Rachel Finlayson Public Swimming pool down at North Beach. Buuuuut, Durban is glittering-up for 2010 so our pool (sniff) is being transformed from a 50M pool to muuuuuch smaller – maybe 25M!!! All for a great cause, but alas !!! our pool is closed, which robs us of our morning sunrise pics!!!! Being a trooper – off I went this morning to our local 25m Tess, camera in hand………… NADA – BOKEROLI we gonna have to wait for the new and improved Rachel Finlayson (I am SURE that this name will change). Bottom line – I LEFT MY CAMERA IN KAREN’S CAR! So – instead of pics of delicious Hoisin Duck Breasts on a bed of stir fried noodles and veggies … I shall have to post my Italain (tongue-in-cheek) Sushi. Please believe me – I made this on Sunday for a good laugh!!! A bit of fun!! So please don’t burn me at the steak for this ………. Perdona mi per piecere Mamma!!!! (Just quickly begging mum-in-law for forgiveness for this blasphemy!)
INGREDIENTS FOR THE SUSHI
fresh lasagne sheets (avb from Italian Deli’s such as l’Edicola in Durban)
ripe spanspek melon
2 slices of fresh norwegan salmon or tuna
6 slices of parma ham
10 fresh asparagus spears
garlic butter
salt & pepper
lemon juice
Lighly poach the asparagus and toss in garlic butter salt & Pepper
Slice the melon into thin strips
Thinly slice (1cm x 1cm) the salmon and wrap each piece in parma ham (you get two pieces of
salmon per slice of parma ham)
Boil the fresh pasta in water and toss in garlic butter with salt and pepper and a dash of lemon juice
Lay the pasta sheet on either a sushi mat or like I did – a bamboo place mat
On the end closest to you place a slice of parma ham wrapped salmon
place some melon
place some asparagus and roll up as you would sushi.
I must warn you – its slips and slides like anything due to the butter – so
in hindsight i would brush the cooked pasta on one side (the inside where the filling
goes) only.
Cut into even pieces and arrange on a platter.
For the Dipping Sauces
Sauce 1 Grate the zest of one whole lemon into Sushi Mayo (or any Mayo)and mix
Sauce 2 Mix a good two inch squirt of Wasabi Paste into some Mayo and mix.
You could also use sweet chilli sauce as a dip
or even the traditional Soya and Wasabi
or make a sweet chilli mayo dip!
Nice and fresh – just like sushi and we had a good laugh eating them
and my hubby thought they were
favoloso!!!! (Fab!!)
