Cheesy mince nachos!

Morning everyone! 

 

I took some mince out yesterday morning with the good intentions of making some yummy meatballs with pasta but I forgot that I had to go get a few things from the shop after work.  So I got home way too late – and tired to make meatballs! 

 

I also got some cheesy Doritos (corn chips) and this is what I’ve made:

 

Cheesy mince nachos!

 

 

For the savoury mince:

 

I fried some chopped green pepper and finely chopped onion until soft and seasoned it with tannie Ina’s green onion seasoning.  I then added the mince and browned it with the green pepper and onion.  Then I added a splash of Worcester sauce, soya sauce, sweet chilli sauce and a table spoon of brown onion soup powder.  I then simmered it for a few minutes.

 

For the assembly:

 

Dish some mince in a suitable little dish/bowl.  Place the Doritos or corn chips all around your dish/bowl.  Add a few tablespoons of chunky cottage cheese and top with grated cheddar.  Bake until the cheese is melted.  Now add some guacamole and salsa.  Enjoy!
