Ridiculously easy milk tart!

At long last – a food post!
Morning everyone! I just had to share this easy delicious recipe with you. I made this over the weekend. The nice thing is that you make this in the microwave oven so there is no need to be scared of burning the filling for the milk tart.

You’ll need:
1 pack tennis biscuits
1 tin condense milk
3 cups warm water
15ml margarine
100ml maizena (corn flour)
75ml cold water
A pinch of salt
1 teaspoon vanilla essence
2 eggs
Cinnamon
Arrange the tennis biscuits in a dish, making a base for the mixture. Mix the condense milk, margarine and warm water and microwave for 3 minutes.
Mix maizena, cold water, vanilla essence, eggs and salt separately. Combine the two mixtures. Microwave for more or less 5 minutes on high until the mixture is nice and thick. Slowly pour mixture over the tennis biscuits.
Crush one or two tennis biscuits with a rolling pin and sprinkle the cinnamon and crumbs over the mixture. Let the mixture set in the fridge and enjoy!
Otherwise it’s going well with me and little “boontjie”! I feel so much better and I even have my appetite back! Yippee! When I think about it I can hardly remember feeling so sick a few weeks ago! I’m 18 weeks now – in 2 weeks time we will hopefully find out if it’s a little sister or brother for little one. Little one has been visiting with oupa and ouma in Ladysmith for the school holidays and she’s coming home this weekend. I’ve missed her so much! And then it’s back to school next week Tuesday – can you believe that this long school holiday and the Soccer World Cup is almost over and out? It’s crazy!

you don’t crush the biscuit base and set it with butter? I’m suspicious of microwave desserts. they always seem to explode or overcook with me!

No need! As the mixture is still hot when you pour it over the biscuits it softens automatically! Just remember to wisk the mixture after a few minutes or so then it will be perfect and without any lumps!

No not at all – for me it tasted the same as when you crush the biscuits with butter. Just quicker and easier to do I think – do you have a substitute over there for tennis biscuits – something with coconut?

just not based in SA at present. Dont actually LIKE tennis biscuits cos of the coconut. I was thinking possibly those digestive things but they are irritatingly round so crushing with butter is probably better anyways. but i think our family crustless milktart wins anyways (even if its not ‘traditional’)

I’m also not very good at this Iky – I remember burning the filling before and it was full of lumps! Very easy in the microwave!
