Poor Hubs has been so hectic and stressed at work the last week. And it’s stress and packing at home on top of that!! Today was major inspection day by some government department and hey! The facility passed with flying colours! So, to congratulate him I thought I would take time out from the packing and prepare another one of the meals that he loves. He is gonna be surprised…..

Beef Olives in a sweet n spicy tomato sauce served with healthy sweet potato garlic mash, whole kernel corn & steamed green beans, broccoli & cauliflower
Beef Olives in a Sweet n Delicately SpicyTomato Sauce
4 Beef Olives
2 Onions – chopped
3 Cloves Garlic – chopped
1/2 Red Pepper – chopped
Glug of Olive Oil
Knob of Butter
1tsp Dried Thyme
Shake of Cinnamon
1/2 tsp Cumin
One long spiral of orange peel and the juice of the orange
80ml Chilli Chutney (depends how spicy you want it)
1 Wineglass of Sweet Rose Wine
1 Can Whole Peeled Tomatoes
Heat the olive oil and butter in a saucepan and brown the beef olives on all sides,
Add the rose wine and a glass of water, cover and simmer until all liquid is evaporated,
remove olives and set aside
Add the onions and red pepper to the saucepan and saute until limp, make sure to scrape
up all the brown bits from the meat on the bottom of the pan
Add a glass of water, the orange juice, peel herbs and spices
and the can of tomatoes with their juices, cut the tomatoes up
roughly in the saucepan with a sharp knife
Add 3 tsp Brown Sugar and the chutney
Bring to the boil, reduce heat, cover and allow to simmer until
the sauce is fairly thickened
Remove the long orange rind – it has served its purpose now
Replace the beef olives into the sauce and allow to cook through about 15 minutes,
stirring from time to time
Sprinkle with freshly chopped parsley or coriander and serve.
To make the mash
2 Sweet Potatoes – peeled and diced
1 Clove Garlic – finely grated
Place in a saucepan and just cover with water,
Add some salt and bring to the boil, reduce heat and cover
then allow to boil until softened and water evaporated
Add a small knob of butter, or a bit of milk if you prefer,
a sprinkling of cinnamon and some fine white pepper
Mash until smooth, season to taste and serve immediately
It was so delicious. Browniegirl was hungry tonight and really enjoyed this meal. So did hubs
For dessert for hubs (not for me), a real staatmaker on a cold wintery night……

Rice Pudding served with a spoonful of homemade Summer Berry Preserves
and a little glass of Jerepigo – he is a happy man!!!
BOILED RICE PUDDING
1 Cup Full Cream Milk
1/3 Cup Evaporated Milk
½ Small Can Coconut Cream
1/3 Cup Arborio Rice
2 Cardamom Pods - seeds removed and bashed till fine with pestle & mortar
1 Cassia Sticks
1 Tbs Rose Water
½ tsp Vanilla Extract
Pinch Maldon Salt
2 Tbs Sugar
1 tsp Butter
Sprinkling of Nutmeg
Method:
Place milk, evap milk and coconut cream in a medium saucepan over high heat
Add cardamom, cassia, salt and flavorings
Bring to just below boiling point, stir occasionally
Reduce heat and simmer very gently for about 10 minutes
In the meanwhile boil the rice with about 1 cup of water in the micro on high for about 5 minutes till rice is al dente (use a big micro bowl for this as it boils over)
Stir the sugar into the milk
Drain the rice then add it to the saucepan
Bring to the boil and simmer over very low heat for about 15 - 20 minutes until rice is tender and most liquid is absorbed
Taste and adjust seasoning and sugar if needed
Add more milk if too stiff – pudding must be of a slightly runny consistency
Stir in butter and leave to cool a bit before serving
Place into serving bowls and sprinkle over freshly grated nutmeg
Serve with a tsp of berry or cherry preserves and a dollop of lightly whipped cream
