FRENCH BUTTERCREAM FROSTING
September 11, 2008 in Uncategorized
This is my recipe for french buttercream frosting that I promised to d1 over at psychic cook awhile ago. Sorry it’s taken so long. I have been so busy with moving house. Better late than never……….anyway he has been going to gym and I havn’t wanted to spoil that for him as I know his weakness is cake hehe……..well thats my excuse and Im sticking to it d1!!!
MOO’S FRENCH BUTTERCREAM FROSTING
Ingredients:
1 Cup unsalted butter
½ Cup Holsum
2 Cups Huletts Superfine Icing sugar (may need more) sieved twice
1 teaspoon vanilla extract
½ tsp Orange Flower Water
½ Cup Fresh Cream
4 tablespoons Cake Flour
Method:
Mix cream and flour in a small bowl to make a roux. Heat the mixture in the microwave for 50 seconds on high. Mix well then set aside to cool.
In the large bowl of mixer combine butter, holsum, icing sugar, vanilla extract and orange flower water.
Beat on low until combined. Then beat on medium speed until very white and fluffy for 5 – 6 minutes.
Next add the cooled roux mixture and beat on medium to high speed for another 5 -8 min. The mixture will appear as though it is lumpy and splitting at first but will become a lovely fluffy consistency good for piping.
Delicious and not too sweet. Sets quite firm and keeps well for a day or two
enjoy……..

Collywolly said on September 12, 2008
Rose & Thorn – sorry, definitely not

Collywolly said on September 12, 2008
d1 – haha I love you tooooooo Holsum is pure cooking fat that you can buy in 125g blocks at pnp or shoprite, checkers etc. its next to the butters & marg.Made out of refined palm oils i think. All butter would probably be the healthiest as the hard cooking fat contains trans fatty acids which are BAD. My last batch I used all butter and it tasted really good!!! ENJOY….don’t overdo it now y’hear!!
xxxx
Have a great weekend. You gonna have to gym again next week
Collywolly said on September 12, 2008
spicy – good to see you! how you doin with your fasting darlin???? I havent yet made chocolate french buttercream but I would imagine that you could either use cocoa powder sifted into the icing sugar or melt some 70% chocolate and pour it in while mixing towards the end. I would melt maybe a tablesp or two of the butter with it and not let it get too cool before mixing it in. Let me know if you try it. I will also try next time I bake. xxx

That frosting looks super. How to unobtrusively direct attention to the recipe? Hmmmmmmmmmmmm. (No use me trying it; I’d blow the place up or something.)

DO you think I could use Wooden Spoon Margarine instead of Holsum? I’m looking for a buttercream recipe that I can use to decorate my twins’ 1st birthday cake (it’s a 2 tier polka dot cake). I want it to be quite firm and as it will probably be very hot Next weekend, I don’t want it to just melt and run off the cake!
Collywolly said on November 17, 2009
Hi Ally_R It would be perfect. I used wooden spoon instead of Holsum on the Ben 10 cake I just made for my grandson Tyler. I didnt have any Holsum so just used the wooden spoon and it worked fantastically. Held well and lasted well today. My daughter gave me a piece today 4 days later and it is still perfectly good. All the best for your twins birthday cake..xxx
Collywolly said on November 17, 2009
Did you see the Ben 10 cake post? If not go take a peek and you will see the french buttercream frosting on it…

I love icing…:)
Collywolly said on November 18, 2009
Yes, what is a cake without it hey Sharon? My grandson when he ate some cake a while ago said to his mom as she was dishing up, dont give me too much of the bread part…but lots of the icing
) that says it all hehe xxx
