kum[again]quat quickie

Yes, their name is of a rather ha-ha-what-did-you-say-quality, but
all it takes is a punnet of kumquats (those fruits that resemble
lilliputian-proportioned oranges) and a little inspiration to produce
an interesting accompaniment.

After quartering my kumquats (how often do you get to say something
that lyrical), I doused them with the abfab cranberry-infused balsamic
vinegar I got from Woolworths ages ago.

In a separate bowl, I nuked the following in the microwave for a
couple of seconds; dollops of creamed honey, some teaspoons of garlic
bits, a finely chopped up green chilli and liberal sprinkles of dried
rosemary and dried basil.

Once done, I poured that mixture over the fruit, gave it a good stir
(use your hands even, if you’re the hand-washing type), ensuring
everything was coated.

I tore up fresh mint and added that in too.

The final touch was a sprinkling of cape herb company’s lime/ginger/rosepetal candy sugar.

It’s good to eat immediately, but the flavours really meld yummily if left to rest for a few hours.
