sweet potato and butternut bake

Remember these gorgeous sweet potatoes?

I was so enamored with the warm hearth-like flavours that I had to encore.

This time I added butternut pieces, omitted the nutmeg and rosemary, and added ground cardamom.

Instead of the fennel used before, I ground over a really lovely pre-mix called Oh!Zone made by the Cape Herb Company. It includes salt, fennel, lemon peel, coriander, celery, mint and cardamom.

After dotting with butter, I arranged dried apple rings on the top and poured the milk over.

After an hour in the oven, mouthfuls of bliss.

(You may add the apple rings halfway through the cooking as they brown very quickly.)

  1. I am sure those are granny smith apples and the flavours are sweet and sour? Looks very good.

  2. i bought a pack of sweet potato and was going to mash them up – this seems like a far nicer idea! yumm!
