GREEN BEAN SALAD / APPLE AND BLUE CHEESE GREEN SALAD

This weekend promises to be a binge session – so I am trying to be good today hence the salads. I came across this winning recipe from the You magazine some time back and although I am not fond of green beans at the best of times –this is a really good salad – healthy, tasty and quick to put together.
GREEN BEAN SALAD


200 gr young green beans, topped, tailed and sliced
1 can ( 400 gr ) chickpeas
1 onion, roughly chopped
125 ml Greek lemon vinaigrette
1 firm ripe avocado, sliced
10 cherry tomatoes, halved
100 gr feta, roughly crumbled
Blanch the beans in boiling, salted water for 3 – 5 minutes. Drain and rinse under cold water.
Transfer the beans into a mixing bowl and add the chickpeas and onion. Drizzle the salad dressing on top.
Add the avocado, tomato and feta just before serving and mix gently.
A fellow blogger said to me that salads are for models and goats ( lol) – I hope my recipes might help to change his mind. This is a really good combination.
APPLE AND BLUE CHEESE GREEN SALAD


3 granny smith apples
Weak lemon water
Croutons
Selections of salad greens
50 g walnuts / pecan roughly chopped
125 gr blue cheese
Mustard vinaigrette
Core the apples, cut them into small wedges and dip into the weak lemon water.
Arrange the lettuce leaves in a salad bowl and add the apple wedges and croutons.
Scatter the walnuts on top. Crumble the blue cheese and add.
Pour over the salad dressing just before serving.
