SOYA, SWEET POTATO AND MUSHROOM PILAU

It’s exciting times with some fellow bloggers winning awards (Nina),
being promoted (Caro) and in Masterchef SA (Candice) – well done –
looks like my timing to get back to blog land is just right.
My contribution to Meatless Monday is an old recipe of mine –
easy and quick to prepare – and also healthy – and perfect for my current eating plan.
This quantity should serve a family of 4
and with most of the ingredients being precooked – this meal does not take long
to put together.
SOYA, SWEET POTATO AND MUSHROOM PILAU
Ingredients
30mls cooking oil
1 onion, peeled and finely sliced
2 bay leaves
6 –7 cloves
1 cinnamon stick
1 small red pepper, sliced
1 tablespoon crushed ginger and garlic
½ teaspoon turmeric powder
1 tablespoon cumin and coriander powder
½ tablespoon chilli powder
1 large cooked sweet potato, diced
2 cooked carrots, sliced
8 – 10 mushrooms, sliced and lightly fried
¼ cup frozen peas
¼ cup frozen sweet corn
2 Tablespoon plain yoghurt
Salt and pepper according to taste
½ tablespoon sugar
2 soya sausages, cooked and sliced
2 cups cooked rice
½ tablespoon garam masala powder
Fresh coriander to garnish
Method

- Heat some oil in a pan and add the onion, red pepper, bay leaves, cinnamon stick and
cloves and cook until the onions are soft. - Add the crushed ginger and garlic and sauté for approx 1 minute.
- Add the turmeric powder, chilli powder and cumin
and coriander powder. Mix well and cook for ½ minute. - Now add all the vegetables, i.e., sweet potatoes, carrots, mushrooms, peas, sweet
corn to the pan and mix well. - Stir in the yoghurt until well blended.
- Add salt, pepper and sugar. Mix well.
- Cook for about 5 minutes allowing the spices to blend into the vegetables.
- Add the soya sausages and mix well and cook for 1 minute.
- Add the rice to the pan and mix well.
- Cook for about 8 – 10 minutes on low heat.
- Stir in the garam masala.
- Garnish with fresh coriander.
