SOYA, SWEET POTATO AND MUSHROOM PILAU

It’s exciting times with some fellow bloggers winning awards (Nina),

being promoted (Caro) and in Masterchef SA (Candice) – well done –

looks like my timing to get back to blog land is just right.

My contribution to Meatless Monday is an old recipe of mine –

easy and quick to prepare – and also healthy – and perfect for my current eating plan.

This quantity should serve a family of 4
and with most of the ingredients being precooked – this meal does not take long
to put together.

SOYA, SWEET POTATO AND MUSHROOM PILAU

Ingredients

30mls cooking oil

1 onion, peeled and finely sliced

2 bay leaves

6 –7 cloves

1 cinnamon stick

1 small red pepper, sliced

1 tablespoon crushed ginger and garlic

½ teaspoon turmeric powder

1 tablespoon cumin and coriander powder

½ tablespoon chilli powder

1 large cooked sweet potato, diced

2 cooked carrots, sliced

8 – 10 mushrooms, sliced and lightly fried

¼ cup frozen peas

¼ cup frozen sweet corn

2 Tablespoon plain yoghurt

Salt and pepper according to taste

½ tablespoon sugar

2 soya sausages, cooked and sliced

2 cups cooked rice

½ tablespoon garam masala powder

Fresh coriander to garnish

Method

  1. Heat some oil in a pan and add the onion, red pepper, bay leaves, cinnamon stick and
    cloves and cook until the onions are soft.
  2. Add the crushed ginger and garlic and sauté for approx 1 minute.
  3.  Add the turmeric powder, chilli powder and cumin
    and coriander powder. Mix well and cook for ½ minute.
  4. Now add all the vegetables, i.e., sweet potatoes, carrots, mushrooms, peas, sweet
    corn to the pan and mix well.
  5. Stir in the yoghurt until well blended.
  6. Add salt, pepper and sugar. Mix well.
  7. Cook for about 5 minutes allowing the spices to blend into the vegetables.
  8. Add the soya sausages and mix well and cook for 1 minute.
  9. Add the rice to the pan and mix well.
  10. Cook for about 8 – 10 minutes on low heat.
  11. Stir in the garam masala.

    • Thanks, Usha – your pics are very good. Its not always possible to cook and bake when the light is perfect for taking pictures.
