roasted plums with cinnamon ice cream

March 8, 2012 in Uncategorized

roasted plums

There is something delightful about cooked or roasted fruit as a dessert. The sweet and tangy warm fruit coupled with freezing ice cream has my taste buds doing flick flacks.

These juicy plums paired with the toasted almonds and then cinnamon ice cream to top it off is an absolute dream. Not to mention super easy to prepare! I feel like I’m saying that a lot these days – I do make complicated things every so often, I promise!

This dessert is perfect for a mid-week dinner party as it assembles and cooks in no time. The ‘hardest’ part will be mixing the cinnamon into the ice cream.

Enjoy!

peanut butter squares

peanut butter squares

Let’s just get this out of the way. If you’re counting calories, look away now. There is nothing, and I mean NOTHING, healthy about these little squares of happiness. But honey, they taste incredible.

Apparently they are the homespun version of peanut butter cups. I’ve never had a peanut butter cup but I am pretty positive that if they tasted remotely like these little ones then it’s a good thing we don’t have them in South Africa. We would have a serious sugar epidemic in my house.

Their sandy base topped with melt in your mouth chocolate are textures that are interesting and very appealing to me. Oh, did I mention that there is no baking involved? If you’re ever looking for a quick treat and don’t have a lot of time, these are your answer.

After eating handing out most of them, I served them with coffee after dinner – a nice difference to a biscuit or after 8 mint.

Happy non baking! :P

mexican heaven

February 21, 2012 in Uncategorized

This weekend I visited El Burro in Green Point for the first time. I know right – where on earth have I been?! Mexican food has probably got to be one of my absolute favourite cuisines – the spicier the better! To cut a lot of oohing and aahing short, the parentals, King R and I had a beyond fabulous time. The atmosphere is great, service friendly and efficient, margarita’s potent (and delicious) and food glorious.

Everyone knows I look at the dessert menu first and was over the moon that they had Churros on offer. These babies didn’t disappoint and are served with a mouth watering dark chocolate dipping sauce. I have been dreaming about them ever since Saturday and can’t wait to go back to get more.

For starters we ordered chilli poppers which don’t have any batter on them. These were delicious and I’m surprised how much I liked them without their batter casings. Mains were Tacos all round – I couldn’t decide which one I liked best. I love that you can build your own Taco – my favourite style of eating is where you can create your own plate.

was forced had to try a tequila since we were pretending to be mexican…

The face that came after this wasn’t so great :P

Lovelovelove El Burro. Donkey… I’ll be back.

earl grey chocolate truffles

earl grey truffle

Happy Valentine’s Day! I hope all of you are smiling today and doing something fun with the one you love, whether that be your boy/girlfriend, family or friends. I think in today’s hectic and busy lifestyle it’s good to take a day to really think how much you appreciate the people you love in your life. Anyways, that’s how I feel about it.

To me Valentine’s Day wouldn’t be complete without CHOCOLATE. Love and chocolate are long lost siblings in my eyes. Instead of buying a gift for your loved one, why not try make them something? I’ve done this a couple of years in a row and not only is it cost effective, the gesture of you spending time physically making something for someone really hits home. These truffles are really (and I mean REALLY) easy to make and taste fabulous. I added Earl Grey tea to flavour the mixture as I’m obsessed with tea cups and all things dainty and thought it would be neat to add it to a batch of truffles. Next time I’ll add more tea as the flavour wasn’t strong enough for my liking but nevertheless they were great. Thanks to Stewart for once again assisting with pics.

May all of you have a wonderful day filled with lots of laughter.

chocolate fudge cake

chocolate fudge cake

This is quite possibly the best(est everest) cake… EVER!

We have declared ‘Cake Fridays’ in our office and I think we have created a monster. we even considered having this for breakfast. Whilst making this the night before I cut off the top bits so as to make the cake level for icing and popped one of these pieces into my mouth. Wow. You probably didn’t even need the icing this cake is so dense and moist. And remember I told you how fussy I am with icing? Well this is the perfect cocoa icing. You’ve got to try this one – it’s sheer bliss.

Excuse my horrible icing techniques – it’s on the bucket list of things to master :P I was in a rush last night and this morning so didn’t have time to take a proper picture of this, so the Instagram one will have to do. I’ll definitely make this again so will do it justice then. I just had to share this immediately!

Happy Cake Friday!

Rushing your pooch to the vet on a Sunday is not fun, I can tell you that much. To cut a long story short we had to rush Holly to the vet yesterday – what a stressful experience. But she is at home recovering and hopefully she will be back to her normal self soon.

On top of that drama King R is in bed feeling unwell too – oi vey! It is occasions like these that I whip out the good ol’ faithful chicken soup. I found this recipe years ago on Nigella’s website posted by another user. Maybe it’s all in the mind but this soup really does make you feel tons better. I thought I’d share the recipe with you in case you ever have a weekend like mine :)

welcome to 2012!

January 4, 2012 in Uncategorized

Hello world!

I’ve just surfaced from my 2 week holiday and am back in the swing of things. The holidays were fabulous – all my time was either spent with friends and family, in the kitchen, or on the couch reading and napping (which happened a lot!). It’s great to feel so refreshed and relaxed ready for the New Year. Hope you all had a great festive season too!

But I still miss Xmas. Those of you who have read previous posts will know that I go mental for the festive season, turning into a machine adorning the house with baubles and spending hours in the kitchen baking.

This year I made traditional German fare (specially for King R) with Stollen, Vanillekipferl (vanilla almond crescents), Zimtsterne (cinnamon stars) and Gingerbread. All of them turned out great and I’ll share the recipes with you over the coming weeks. They were so delicious that I’m almost certain I’ll break Xmas tradition and bake them throughout the year.

The Vanillekipferl were by far my favourite and the best looking out of the lot. So come up with an excuse to make these little treats early this year – they are truly delicious.

chai tea crème brûlée

December 15, 2011 in Uncategorized

A couple of days ago I shared my article in Crush online magazine (here). The article is centered around tea and using it as an ingredient in cooking. I opted for desserts mainly because I have a ridiculously sweet tooth and will jump at the chance to bake any sort of sweet thing.

I’ve always wanted to try and make crème brûlée but have never (and still don’t) own a blowtorch. I was then trawling the internet for chai tea anything (another one of my favourites) and came across this recipe for chai tea crème brûlée – and it didn’t require a blowtorch!

I must admit I was rather nervous at caramelizing the sugar topping as sugar is flammable and I was paranoid that I was going to set the kitchen alight. So if you are going to attempt this recipe, please do be cautious and watch your custards in the oven when it is time to caramelize the sugar topping as the ramekins need to sit very close to the grilling element in the oven. A recipe for disaster if you don’t pay attention!

Fire hazard aside, this was a great tasting dessert. The custard was smooth, creamy and light, everything I like in a crème brûlée. There is a subtle hint of chai tea which is just lovely – it gives a great twist to this classic.

The chilling time is extensive so allow ample time for the custards to set.

Thanks again to my friend Stewart from sketchesoflila who shot the pics for me.

a good day

December 12, 2011 in Uncategorized

Today is a good day.

My very first article has been published – in a legitimate online magazine – eeeeeeeeeeee!

A big thank you to Michael from the Crush team for allowing me to ramble on the pages of his beautiful mag.

You can read Crush Online here. I’m on page 30 & 31.

I’m also making Churros tonight. Like I said, today is a good day.

Watch this space.

Much Love,

jingle bells!

November 29, 2011 in Uncategorized

Christmas is probably my favourite time of year. Everybody seems more happy – or maybe it’s just because for those of us who work the holidays are nearing ;)

The twinkling lights and sparkly tree decorations turn the corners of my mouth into an instant smile and make me nostalgic all at the same time. I start remembering Christmas in our home as a child, the evening spent decorating the HUGE fresh tree my dad would bring home, the beer and biltong I used to leave for Santa (my dad was clever :P ) and waking my parents up at the crack of dawn to open the many gifts waiting for me under the tree (I was an only child so Christmas was GREAT – haha). It was a magical time in my life and I think that’s the reason I love this holiday so much. I go mental for it.

Since King R is German (am way jealous of all the white Christmas’ he’s had) I’ve made it my mission to bake him all the wonderful German treats that he used to enjoy over this time of year. Last year I made Stollen, a traditional bread with rum soaked fruits and nuts, that took me 7 hours (which was worth every minute). This year I’m attempting one that takes 3 days, along with vanillekipferln (vanilla almond crescents), zimtsterne (cinnamon stars) and gingerbread men. All of these goodies have that lovely spiciness that I like to sum up as ‘Christmas taste’. Oh and I’ll be buying copious amounts of mince pies, my absolute weakness!

Along with my baking marathon I like to blast Christmas music as it’s the only time of the year I’m allowed to listen to it shamelessly. I’ll also be filling the home made advent calendar I’ve decided to introduce this year in order to infect King R with my Xmas spirit and make me seem less crazy and obsessed with this holiday.

I’ve also decided to pick up a pen and write Christmas cards to my friends and family. I’m so used to typing away at a keyboard that a) I don’t have a handwriting style anymore and b) I miss fetching the mail and finding beautiful cards from our relatives and friends that my mom would read out to me. So this year I’m bringing old school Christmas back – and I plan on keeping it that way for years to come.

So ahead of the festive season I wish you all the joy in the world and hope you enjoy this merry time of year. I can’t wait to start baking, wrapping and decorating.

I think I might just cave and put up my Xmas tree tonight ;)

PS. While you’re reading, you’ve got to try Woolworths’ gingerbread latte – it’s changed my life. Christmas in a cup I tell you!
