Baked Cheesecake
Ingredients
Base
1 pkt biscuits (Marie’s, digestive of chocolate even ginger makes an interesting base)
200gr margarine or butter(melted)
Method
Crush the biscuits and mix with the melted butter and press in the bottom of a springform pan.
Keep in fridge while you make the filling.
Filling
Ingredients
2 x 250gr creamed cottage cheese – I use Lancewood
1 tin condensed milk
juice and zest of 1 lemon
125ml cream
3 egg yolks(keep whites)
zest of a lemon – optional
Method
Mix the all the ingredients except the egg whites.
Now beat the egg whites and fold into the above mixture.
Pour
into prepared pan(with biscuit base) and bake at 180 degrees Celsius of
450F for 25 minutes. Turn off the oven,o pen the ovendoor and let the cheesecake cool down in
the oven.
I made mine in individual little pans and topped it with some raspberries and a chocolate note, just because this cheesecake will bring music to your ears!!!!

Hi Nina,
Will this work if i bake it in small individual ramekins?
Do I need to increase the baking temp / baking time or does it stay the same? I want to bake 8 small cheese cakes in sperate ramekins? I’ve never done it before – any tips?? thank you
