Lamb Curry – my way!!!!!!

Lamb Curry is my hubby’s favorite!!!! When I make it, I am in the pound seats, for sure!!! I think my husband was in love with my mom before I was even an option, because she served him this curry. To this day he is always very cautious when eating his curry, always asking : ” Who shall I thank this time?”. So, as you can tell, this recipe comes from my mom, where she got it from, heaven knows, but when ever we have a big event, people are asking for Tina(my mom) or Nina’s Curry. This is then also the recipe I used for the big pot I made at the potjiekos competition we had a while back. BTW I serve 70 from the No. 10 pot and together with my home made bread I sold per slice, we made R2200.00 for our welfare kitty.


Back to the Curry. If you are a Blow-your-head-off-Curry fan, this is not for you. If you are a purist when it comes to authentic Indian Curry, this is also not for you! I can guarentee you though that everyone in your family will LOVE this…young and old. I never pre-sell my tickets, but I always sell out before the pot is even ready. This year I had people who made and entered their own pots, come and buy some of my curry!!!
Last year, I catered for the school staff on a monthly basis. Everytime suggested that we put curry on the menu, I got voted out, but I was determined to let them taste my curry, so I called it a Fruity Chicken Stew. They loved it!!! I made it twice after that!! The thing is, you can make this curry hot or not so I think this is a wonderful recipe to introduce your family to curry and then go on to the more violent stuff!!!
So, to my Durban friends, stop reading………..

Lamb Curry – Nina’s way!!!!
This sauce is the secret here and this sauce is for 1kg of mutton or beef.
1 heaped tbsp flour
3 tbsp All Gold tomato sauce- no cheap stuff here, pls!
3 tbsp Mrs Balls Chutney- maybe Wellingtons, but none other!!
3 tbsp golden syrup
1 tbsp curry powder(increase if you wish)
3 tbsp white vinegar- I always put in 2 first and them add the 3rd if needed
1 chili – optional
Mix the tomato sauce with the flour first to prevent lumps from forming. Then add all the other ingredients and mix. Keep until needed.
Let’s make the curry
You will need..
1 kg lamb knuckles or beef cubes
1 big onion- finely chopped
1 thumb-size piece ginger grated
2 cloves of garlic – crushed
1 tsp fennel seeds
1 tps coriander seeds
1 cinamon stick
1-2 star anise
vegetable oil
mutton or beef stock
1 tbsp curry powder
2 tsp turmeric
about 1 kg potatoes – cubed
salt/pepper
Heat the oil in a pot and fry the onions. garlic, ginger and all the spices. When the onion is soft, add the meat and brown slightly. Add the stock and let it cook until the meat is soft and falling off the bonAdd some stock if needed. When the meat is soft, add the potatoes and cook for another 10 minutes until the potatoes are soft. Make sure there is enough liquid in the pot. Add the sauce and cook through. Taste for seasoning and adjust. If you like it sweeter, add more syrup etc….. Serve on fluffy basmati rice, couscous or even better stampmielies!!!!!

I am so going to make this when I’m “home” with my parents in Stilbaai – Mom can’t eat hot food, but we still miss our curry. This is going to go down a treat. Thank you for sharing it, I can’t wait to make it!

Oh how delish Nina-tjie.
We also make a bake in the oven if you dont mind curry, its has apricot jam and vinegar in the mixture too, so you get this sweet, hot and sour sauce. Positively divine and a firm family favourite!
I wish I could have joined you in your welfare drive, looks as though you were really successful and R2200 on a curry out of a single pot is a pretty mean feat!! How clever are you xxx

You can make this curry in the oven too, just add the sauce at the end, it will burn like if you are to “haastig” with the sauce!

I don’t know if this will be a tad too sweet for your Moroccan palate, but let me know. Any fruity chutney will do. Sometimes when it is the “end-of-the-month-salticrac budget”, I omit the chutney and just add more vinegar and sugar!!!

My family will love the sweetness!!! I will try leave out the chutney for the “salticrack version”!!! We have a SA colleague who occasionally has a stash of these kind of things for special occasions, will try her!!!

Hi Nina, new to your blog but all your recipes look devine. If I have a diabetic in the hse and I want to try your curry can I substitute the syrup for sweetner or will it lose the flavours?
