Fish Cakes and Very rustic Mushy peas.

With all the healthy eating and dieting going on here on Food24, I think it is about time that I join the healthy eating brigade.  I don’t mind eating lean, but I hate eating bland or uninteresting food. My family rates my meals every night and I average on “9″ most weeks, so I have a reputation to maintain…….(he-he)

We eat a lot more fish in this family and also way more beans than before so I think we are actually doing ok!!! A while back I made these delicious Tuna Fish Cakes with Mushy Peas and it went down as a whopping “10″ with the family.  I  made another “heart-friendly”  version of these fish cakes and the family liked them even more, so I got a “10+.”

How could I make these fish cakes even better, I wondered……


Well, I did!!!!  I used salmon that is High in all the right kinda oils, but I also used oats AND beans. Yip, you read it correctly……beans in a fish cake….!!


Here is what you need…… I basically used the Pilchards Fish Cake Recipe, but made the following changes.


Salmon and Bean Fish Cakes

Ingredients


425gr tinned salmon

100gr dry Jungle oats

1 tin of beans – I used a 4 bean mix – drain well

lots of parsley

1 small onion grated

salt/pepper

zest of a lemon

2 eggs


Mis everything together in your blender and fry in shallow oil until crispy and golden brown. Drain and serve with a fresh tomato salad and a boiled potato…..


Ps. These fish cakes were delicious, crispy on the outside and so soft and mushy on the inside.

  4. These look divine. I love fish cakes but mine always fall apart. And the recipe is almost identical to yours. Wierd! Maybe I must chill them first?
