Tikka Fish Kebabs
March 11, 2010 in Uncategorized
Goodmorning everybody, seems like we are having a bit of relief from the heat this week.No need to steer away from the heat in my kitchen though. We've been having quite a bit of meat in in the last couple of days so I thought it was time to ring the changes with some fish.Tikka Fish Kebabs - Recipe Adapted from Suleka. com
Ingredients
about 500-600 gr yellow tail -filleted and cut into big chunks
For Marinade
Plain yoghurt - 250ml
Onion, finely chopped - 1/2
Ginger( grated) - 2cm piece
Garlic (crushed) - 4 cloves
Ground coriander - 1tsp
Lemon juice - 2tsp
Garam masala - 11/2tsp
Chilli powder - 1tsp
Tomato purée - 2tsp
Salt - 1tsp
pinch of sugarMethod 1.Prepare the the marinade first by mixing together all the above ingredients. 2.Cut the fish into bite-sized chunks and thread onto a skewer. 3.Place the skewers in a shallow dish, spoon marinade over and turn so that the fish and vegetables are coated evenly. 4.Cover and marinate in the fridge for one hour. 5.Preheat the grill. Lift the skewers out of the marinade and cook , turning once until the fish is cooked and firm, and both the fish and vegetables are slightly charred.

I am working non-stop on my “talks” at the conference.
I hope you will all find it helpful and interesting
and “Yes” Jan, I will be handing out hard copies of the talks.
Have a fab day everyone..
Thought for the day…..
