Easy Sticky Onion and Mushroom Chicken – as promised!

I try and stick to my promises and yesterday I promised to share an easy mid-week Chicken recipe with you. Things are slowly but surely returning back to normal in my household and I will get more and more time in the kitchen and less and less at the bedside!!
Recipes for sweet and sour chicken are endless here on the internet, but I have yet to find an easier recipe that uses such simple everyday ingredients. The result satisfies your craving for something sweet and sour, guarenteed for sure!

Easy Sticky Onion and Mushroom Chicken
8 Chicken Pieces – I used leggs and thighs or just thighs
1 cup good quality balsamic vinegar
½ cup good quality soy sauce
1 punnet mushrooms – optional
2 red onions – finely sliced – optional
Pre-heat oven to 170C
Clean the chicken pieces and place in an oven-proof dish. Slice the mushrooms in half and scatter the mushrooms and the onions over the chicken. Mix the vinegar and soy sauce and pour over the chicken. Bake for 1 hour until the chicken is cooked and sticky. During the hour, turn the chicken pieces once or twice so that the chicken is coated in the sticky sauce. Serve with a baked potato and a lovely green salad!

I am going to the shop to buy some chicken and soya sauce and balsamic vinegar and this is going to be supper tonight, I can almost taste it already.

I really want to try the chicken dish, but can you use something else than balsamic vinegar? (Not so good with the sugar in balsamic…)

Do you have a sugar issue? Maybe try normal brown vinegar with a few spoons of sugar replacement…Not sure if it will work, the sugar makes it sticky, but it is worth a try!!
