Valentine’s Aftermath – Mushroom Mania

Shoo, after all the chocolate we’ve been having I must say I have had my share of sweet things. However I still have to share chocolate Brownies, chocolate and Amarula Ice-cream as well as a very sexy fig dessert with you that I made using my Valrhona Chocolates. It will have to wait though. For now, it will have to be something savory and because yesterday was Meatless Monday, it had to be meatless.

I remember from my days at varsity, that Juicy Luicy use to sell Cheesas and it was our favorite Friday afterclass treat. Needless to say, cheesas feature quite regulary in our house, especially on Sunday nights.

You can use whatever filling you want, cheese, ham, salami, asparagus or chicken, but last night I used mushrooms.  Because I am in a mushroom mood, I want to share some more mushroom recipes with you!

Red Wine Risotto with Pan-fried Shiitakes

 

Fritata with Exotic Mushrooms

 

Spaghetti Carbonara with Grilled Portebello Mushrooms

 

Chicken and Noodle Broth with Enoki Mushrooms

Here is what you need.

Mushroom Cheesas

250gr or 1 punnet mushrooms – buttons, shiitake or mixed

100gr butter

salt/black pepper

squeeze of lemon juice

1 tbsp flour

250 cream

about 1 cup grated mature cheddar

6 slices of toasted bread – your choice

 

Clean the mushrooms with a damp cloth and halve them. Melt butter in a pan and saute the mushrooms until they are brown and caramelized. If you need to add a little more butter, do so. Season with salt and lots of black pepper. Taste and add the lemon juice. Now srinkle the flour over the mushrooms and stir through. Add the cream and allow to thicken. Place spoonfuls of the mushroom mixture on the bread and top with the cheese. Melt under the griller until hot and bubbly. Serve with a green salad and some hot mustard if you wish.

  3. My favourite at Juicy Lucy was the Asparagus. My mom and I always used to eat there. Such great memories. You and I must be linked up in some way because I was planning to make the Asparagus Cheesas some time this week! lol
