A cure for the exam time nibbles!

I don’t know about you, but I kind of loathe exam time, it is just so stressful for me. Ok, so I am an ex-teacher and we make the worst mothers in the world. I know my children’s IQ’s so they should do better, study harder, perform more……. and yet I also want them to be happy, balanced and well-adjusted. I tell you, they have a tough time with me during this time….
On the other hand though, I try and make up for my pain-in-the-butt behavior by making sure the house is stocked with tasty treats and nibbles.
On Saturday we had to study Geography and EMS, so while they were studying, I made this delicious White Chocolate, Almond and Coconut cake totally off the cuff with only the ingredients I had available.. Needless to say, the kiddos loved it and nearly finished the whole cake off in one sitting, but I could save two pieces for their lunchboxes today!!

I made your peanut butter and cornflake cookies and they are simply brilliant, but can I halve the recipe? Will the ratio/proportions still be ok?

Yes, you can halve the recipe, but why not make the whole batch and use for gifts etc?

My grandchildren are absolutely hooked on peanut butter and coconut, not to mention white chocolate – may I please have both your recipes – they are of course also writing exams right now and could do with a boost like that!
