Trying my baking skills for Dinner Diva Semi Finals

BakingIf baking has never been a strong point of yours, would you be so crazy to try in in a semi-final of a cooking competition against most accomplished cooks? I don’t expect your answer to be “Yes”, but I am going to give it a go…. my confidence in my baking skills have grown somewhat and there is nothing like a good challenge to get the mind in a performing mode….

The basic vanilla sponge has endless possibilities, just last weekend, we transformed it into a glorious and posh looking grand finale to your Christmas Dinner.  Tomorrow I will be making a four-layer

BakingGranadilla Mousse Cake!

Vanilla Sponge

Ingredients

2 x 250 ml Sasko cake flour
2 x 250 ml caster sugar
125 g butter
1 x 250 ml boiling water
4 x-large eggs
4 t baking powder
1/2 t salt.

Zest of 1 lemon

Method

Preheat oven to 180 C
Prepare two 23 cm cake tins by lining them with baking paper and spray thoroughly with non-stick spray.
Sift together all dry ingredients.
Beat eggs and sugar until white and fluffy.
Melt butter and boiling water together. Now fold the dry ingredients into the egg mixture and add butter mixture gradually. Work gently to keep all the air in.
Divide batter into the two pans and bake for 25-30 minutes. Test in the middle of the cake to see if ready before you take the cake out the oven.
Remove the cakes from the tins and cool on a cooling rack.

  2. that cake looked pretty awesome to me and I am sure it tasted fantastic – can I book a baking lesson for 2013? :-)
