The easiest ice-cream dessert you will ever make!

After a weekend of non-stop( 24 hours to be exact) cooking, I feel like a train has run over me, but today starts the beginning of a new chapter and I have to fake it till I make it!!

Over the weekend, I made 150 hamburgers, 120 hot dogs, 120 pancakes and 150 bacon and egg rolls…….. normally something I can do quite easily……Doing it in the middle of the night after you’ve had a full day in the kitchen is a completely different story!

BUT, if you ask me whether  I would do it all over again tomorrow, my pots and pans will be in the car already. I had such fun with the kids and to see their dedication, the friendships and untapped energy  right through the night, was so inspiring! I have such faith and hope for our youth! To give you an idea……each one of these kids, did a trip to Robben Island! That is an achievement!

After a weekend like that, I need a short cut dessert recipe. Something that saves time, energy, but must still be fresh and delicious. Ice cream always hits  the spot, so I made this basic Eton Mess Ice Cream Cake….

Eton Mess is a delicious dessert of fresh strawberries, meringue and cream which is traditionally served at Eton College’s annual cricket game against the students of Harrow School. The word “mess” might be confusing, because our perception of the word is that it is ugly and inedible…..well that is so untrue of this dessert! You WILL want to make this…….

Countdown to Christmas menu – Festive Fruit Lollies

Count down to Christmas? Happy days my friend, we are 6 days away from Christmas and hopefully in two days, I will be joining my family for our very short holiday. By now my mom’s kitchen will be running almost 24/7 in preparation for our Christmas Feast! Our holiday has barely started and yet we have had so many parties and farewells and year-end functions that my body is already saying: “hands-up!”

I cannot remember when I last I felt hungry sitting down for a meal, I also find it difficult to skip a meal because it is a very tough call to decline some of the delicious food on offer. What is the solution then? I started looking for healthier alternatives, food and desserts that are still delicious to eat, but just a little lighter on the calories. Not so difficult after all. I know this time of the year it is easy to eat salads and grill some fish which are both healthier options, but it is a dessert department that causes the most havoc in my life. Who can resist a creamy, dreamy pavlova or a trifle or your own homemade ice-cream? Sadly though, these desserts all have one goal and that is to find the quickest path to my hips and thighs where they will just pile up and stay!
