Wheat Risotto with Poached Goose Eggs

I love making risotto, so it is not at all strange to find numerous recipes for risotto on this blog. You will find Spring Risotto, Blue Cheese Risotto with Honey Comb, Red Wine Risotto with Shiitake Mushrooms and even an oven-baked risotto for those of you who still fear the unknown of making risotto from scratch. I read about this wheat risotto on Lifeisazoobiscuit some time back and because wheat is one of my favorite grains, I could not wait to try this recipe.
Luckily for me I got to try this risotto at a Food Jam a few weeks ago and like I expected, this recipe did not disappoint. May I just say at this point, my good friend Anel is most probably the most amazingly talented and intuitive cook I have ever met…. with a flavor palette of note and a no-fear-of-failure approach to cooking, she wows readers to her blog time-after-time! I had the honor of cooking with her in preparation for our show on RSG and she took 3 ingredients and changed it into the most amazing tomato sauce I have ever tasted.

Rice Pudding or Risotto?

A savory twist on a classic rice pud!

I love the creaminess of rice pudding, I also love the fact that it is not so overly sweet as I am not a fan of sweet desserts, maybe with the exception of Malva Pudding, so when I saw rice pudding on the menu at Sidewalk Cafe, I was a happy camper, until my daughter pointed out to me that it was …….
indeed a savory rice pudding, in other words risotto which is also one of my all time favorite meals. At first I was somewhat confused  at the thought of a savory rice pudding, but the idea grew on me and when the dish finally arrived, I was so ready to tug in…..
I was in love, every bite was just so delicious with all the different textures from the sun-dried tomatoes and the toasted nuts and in between mouthfuls of the creamy risotto…heaven on a plate! I

Winter-warming roasted garlic, corn and butternut risotto

Humble ingredients ......

This time of year, I want winter-warming recipes, recipes that stick to my ribs and warm me up from the inside. A creamy risotto does just that. I think it is so awesome  that three such simple ingredients can be changed in something so delicious and creamy ….rice, cheese and stock! I had only a few ingredients in my fridge because I was away all week and have not done my shopping. Come and see how I made an amazing supper with such humble ingredients…….
We are also in the tight grip of a June exam, so my afternoons are hectic with trying to study with Miss Muffet. So yesterday morning, while I still had time, I roasted my garlic, butternut and 3 cobs of corn, so at least I needed only 30 minutes before supper to whip up a risotto. I know that I am an advocate for  a cop-out oven risotto, but somehow yesterday, I needed the stand-and-stir-therapy.
