A cure for the exam time nibbles!

I don’t know about you, but I kind of loathe exam time, it is just so stressful for me. Ok, so I am an ex-teacher and we make the worst mothers in the world. I know my children’s IQ’s so they should do better, study harder, perform more……. and yet I also want them to be happy, balanced and well-adjusted. I tell you, they have a tough time with me during this time….

On the other hand though, I try and make up for my  pain-in-the-butt behavior by making sure the house is stocked with tasty treats and nibbles.

On Saturday we had to study Geography and EMS, so while they were studying, I made this delicious  White Chocolate, Almond and Coconut cake totally off the cuff with only the ingredients I had available.. Needless to say, the kiddos loved it and nearly finished the whole cake off in one sitting, but I could save two pieces for their lunchboxes today!!

Two Healthy Butter Bean Dips for Meatless Monday!

The idea of a butter bean dip or pate is definitely not my idea as the internet is loaded with recipes.  Apart from being very healthy and good for you, butter beans are dirt cheap and so, so versatile.  You can opt for the Greek flavors of basil, garlic, olive oil, lemon and chili or you can go the Middle Easter route with cumin, coriander, garlic and paprika. Why don’t you make both versions of this healthy Butter Bean Dip and let me know which one you prefer!

Butter Bean Dip

Healthy Butter Bean Dip with Greek Flavors

Makes  1 small bowl full

Ingredients

1 410 g Rhodes Butter Beans

1 clove garlic – minced

juice and zest of  lemon

salt and pepper to taste

1 very small chili – chopped

60 ml extra virgin olive oil

1 handful of fresh basil

Method

Place all the ingredients in your food processor and blitz  until the butter bean pate has the texture and consistency you like. Taste and adjust seasoning. Spoon into a small bowl and drizzle with olive oil and serve with warm pita breads.

A Dinner Divas Mexican Feast for the weekend

For those of you who have never heard of Dinner Divas before, you can read all about it here and here! In short it is a fab new cooking program which involves 12 pretty awesome bloggers and in the end there will be one and only one Dinner Diva. So  for the next 13 episodes, set you times, PVR’s, biological clocks or do whatever you have to not to miss any of the action.

As I have mentioned earlier, I decided to prepare a Mexican Family Feast because it is something I make for my family often. It is an affordable, easy and fun way to eat and the teenagers in my house love it! Let’s hope you and the judges love it too!

Recipes for a Mexican Family Feast

Tortilla Shells

Ingredients

2 ½ cups Sasko Cake Flour

¼ cup yellow mealie meal (polenta)

½ t salt

¼ t baking powder

¼ cup lard – make sure it is fresh

Method

Place flour, mealie meal, salt and baking powder in the bowl of your food processor and run the machine. While the machine is running, add little bits of the lard and allow the machine to work it into the flour until all the lard is finished.  After the lard is worked in a add  a little bit of hot water, just until the dough comes together.  Bring dough together in a ball, cover with a clean cloth and allow to rest for about 15 minutes. Form 12 small balls and roll out with a rolling pin, as thin as you can. Heat a cast iron pan on the stove and once the pan is hot, place a tortilla in the pan and cook until it forms brown spots on both sides. This is to make soft tortillas. To make taco shells, heat some oil in another pan and as the tortilla comes out of the pan, fold it in half and fry in the oil, turning it once until both sides  are crispy and brown.

Yields 12 taco shells

Mexican Meatballs

Ingredients

500 g good quality beef sausages – best quality you can find

2 spring onions – green and white parts finely chopped

1 Nulaid Egg

3 T chopped fresh coriander

2  t  ground cumin

Method

Remove the beef from the casings and place in a glass bowl. Add all the other ingredients and mix with a fork. Roll into mini meatballs and fry them in a a little oil.  Keep warm while you prepare the guacamole, refried beans and salsa

Yields 24 meatballs

My Easy Cooking turns a new leaf……………

It is time……. my favorite line from the block buster Lion King!  Well, it certainly was time to change My Easy Cooking, it was as outdated as my  most comfortable pair of slip slops, yet change is not always easy as one might think. Not only did I have to change my design and “feel”, I also had to move to a different platform and to move with 600+ posts with all the photographs, proved to be a nightmare. It had to be done and after 2 weeks of slogging, spitting fire and swearing never to do it again, I am proud to present to you the new My Easy Cooking! What do you think? For the occasion, I made something really quick and simple, yet delicious and quite snazzy if I have to say so myself!

Mediterranean Snacks for the weekend

Mediterranean holiday is more what we need at the moment, but at least we can snack in style! Yes, it’s the weekend baby! Hard to imagine that a whole week has gone by and 2 days of a slightly slower pace is but a night away. During the week it is tough trying to keep up with deadlines, meetings, mom’s taxi duties as well as all the other things that come in between. Come Friday, we just want to shake some of the routine jobs….like cooking for instance!
I can hardly imagine that cooking is a “job”, but I do realize that for many of you reading this blog, it is! Not to worry, I will gladly be your closet chef. For this weekend, I have a snack idea that has 4-5 ingredients, takes minutes to prepare, yet the taste will quickly whisk you off to some Mediterranean destination! Keen to try, let’s go!

Padkos does not have to be boring!

50 kids, a bus, a destination and a trophee to be won, That is my life for the next 4 days…..

Needless to say, padkos was a major part of all this. So if you are going on holiday, make padkos a little bit more interesting than just sandwiches and coffee!!

If you have time, stop next to the road, make a little fire and enjoy the journey!!

Jack Parow Broodjie

Ingredients
1 big olive ciabatta
1 big eggplant – sliced in 5mm slices lengthwise
olive oil
2 big organic tomatoes or about 8 sun-dried tomatoes
4 tbsp Pesto Princess Basil Pesto
fresh herbs of your choice. 2 tbsp cream cheese
4-5 slices of mature cheddar cheese
fresh rocket

Method
Pre heat the oven, brush eggplant with some olive oil, season and roast in oven for 5-10 minutes or until the egg plant has browned. Alternatively, brown in a skillet on the stove. Slice ciabatta open lengthwise and start packing the fillings. You can basically use what ever fillings you have available!  Close the ciabatta and place in a grid that can close. Grill on an open fire(very low heat), allowing the bread to brown and the  cheese to melt and become all gooey. Serve with your favorite meat and a fresh salad.
