Chicken breasts with pesto mayonnaise

This dish can be made with deboned chicken fillets or chicken breasts with skin and bone. I am sure it will be just as nice with any other part of the chicken. Serve this with potato mash or couscous topped with olives!

 

 

 

 

 

Ingredients:

6 Chicken breasts (fillets or with the skin and bone)

Salt, black pepper and chicken spice

80ml olive oil

80ml balsamic vinegar

80ml soya sauce

80ml lemon juice

60ml Honey

 

180ml mayonnaise

45ml basil pesto

Feta cheese (optional)

 

Season the Chicken with salt, pepper and chicken spice.

Mix the olive oil, balsamic vinegar, and soya sauce and lemon juice together. Marinade the chicken in this mixture for half an hour.

Pre-heat the oven to 180ºC. Place the chicken, with the marinade in an oven roasting dish, cover with a lid, and roast for 45 minutes.

Remove from the oven and increase the oven temperature to 220ºC.

Drizzle the chicken with the honey and return to the oven, open, for another 20 minutes, until the chicken is browned.

Mix the mayonnaise with the basil pesto and spoon over the chicken pieces. Top with some crumbed feta (optional).
