The weekly menu

I never had time over the Easter weekend to do a menu for the week, but at last here is one for this week! I do acknowledge the fact that some people did not find the last menu budget friendly, but my excuse is that it was Easter and my family and I regard Easter as very special, so I went overboard with some of the dishes on the menu.

I think most schools have already closed for the Easter holidays and you want to spend time with your loved ones. Therefore, I am sure that you do not want to spend too much time in the kitchen. Although most of the recipes in this week’s menu are not quick to prepare, I hope I will at least save you some time to decide what you are going to cook this week. I am also including a shopping list to make it even easier for you!

PinkPolkaDot’s menu for a week from 4 to 10 March 2013-03-03

One of my friends, who enjoys reading my blog, recently requested me to a weekly menu, with a list of the ingredients required. I agreed to this and this is my first weekly menu. I have never realised how much work it will be, but will try my best to do this on a weekly basis.

Please note that the ingredient list does not include general ingredients such as salt, pepper, oil, cake flour, milk, bread, sugar, eggs, butter, etc.

Monday: Lentil Bobotie with rice and tomato sambal and banana sambal

Tuesday: Chicken ghoulash served with tagliatelle

Wednesday: Curry banana frikadelle served with mashed potatoes and a green salad

Chicken stuffed with cranberry jelly

It is almost holiday time! I don’t know about you, but in my household there are always a couple of more mouths to feed during this time! I also like the idea of preparing something more festive- like during December!

To me chicken is always a good choice and it is not too expensive. Cranberry jelly is quite expensive but with one can or bottle, you can do a lot!

This chicken dish is perfect for this time of year!

On a personal note: Both my daughters finished with exams, but the one, sadly, must re-write one of her exams. This means the she will not get her degree in December but only in March. :(   My other (younger) daughter passed all her subjects and will be getting her degree on 12 December 2012. I am extremely proud of her, because she did not fail one exam during the past three years. She is also on the Stellenbosch student council in the position of community service leader. She has been doing so many community-based projects this year and she has been spending a lot of her time on this. She is so passionate about people and will do anything to uplift the community.

Bacon, Cheese and Peppadew Muffins

I cannot believe that it is the September holiday already. The last quarter of the year always passes so quickly because everyone is always so busy. Before we know it, it will be Christmas and then 2013!

If you are living with a teenager who brings home friends every single day, you will know that they are always hungry and always looking for something “nice” to eat. These muffins are perfect for breakfast, lunch or in-between meals.

I baked these in large muffin pans but bake it in smaller pans if you want to add it to a lunchbox or if it forms part of a savoury item to a tea party.

The muffins freezes very well, so double up to save time. Just take it out a couple of hours before serving or defrost it in the microwave.

Pasta with a chicken liver sauce

I attended the Food Bloggers Indaba in June, this year. It was a great event and we received 3 bags full of delicious goodies. I have used these goodies to create wonderful food, and this pasta with chicken livers was inspired by some of the things in our bags.

I craved chicken livers for quite some time now, but since my son does not eat this, I had to wait until one night he went out. Well, he chose Tuesday night to go and watch a musical at a local school and they would also have supper there.

Although I was glad that I could finely cook chicken livers, it was also an awful night to take him to attend the show!   If you live in Cape Town, you will know that we really had violent storms and heavy rain recently. We also had some hail or ice rain, like some people described this.

Well, luckily he enjoyed his night out and we enjoyed our chicken livers!

At the FBI we received some Fairview Amazing Pinotage Rosé! VG and I opened it one night and it is one of the best Rosés, if not THE BEST, I have ever tasted. Unfortunately we could not drink all of it, so I added some to these chicken livers with some Massel’s Chicken Bouillon cubes that we also received in our goody bags. I really think this was the best chicken livers that I have ever made (or tasted).

Bacon and roasted chicken cheesecake. Quick suppers number 2

This was another quick supper idea, based on one of my other recipes… and it was extremely nice!!

 

 

 

Ingredients:

1 x shortcut pastry

oil

250g bacon, cubed

1 onion, peeled and chopped finely in a food processor

4 garlic cloves, peeled and chopped in a food processor

250g smooth full-cream cottage cheese

350ml ideal milk

4 eggs, beaten

15ml paprika

Salt and freshly grounded black pepper

1 x roasted chicken, skinned, deboned and cut into pieces

 

 

Pre-heat the oven to 180ºC.

Roll the shortcut pastry out on a floured surface and line a buttered 28cm quiche dish with the pastry. Prick with a fork and place in the fridge to rest.

Heat a little bit of oil and fry the bacon, onion and garlic till soft. Leave to cool.

Mix the cottage cheese, ideal milk, eggs and paprika together.

Season with salt and black pepper.

Stir the bacon mixture and chicken into the egg mixture and spoon into the prepared crust.

Bake in the preheated oven for 45 – 50 minutes, until the mixture has set and is a caramel colour.

Serve hot.

 

Notes:

I prefer making this pastry for the crust.

Prepare your own roasted chicken in advance.

 

 

Tea Party and Chicken Quiche recipe

I hope that all of you are well and that you are having a wonderful, blessed December. I was so busy before I went on holiday that I never blogged about the tea I gave to my friends to say goodbye and end off the year.

 

I decorated the table in pastel colours with my favourite crockery.

 

On the menu was:

Asparagus Quiche

Chicken and mushroom Quiche

Spinach and Feta savoury cheesecake

The Chicken and Mushroom Quiche was loved by everyone and makes a very nice light supper, with a salad.

 

Ingredients:

For the Pastry:

 

180g cake flour

3ml baking powder

1ml salt

70g butter

60ml – 75ml water

 

  1. Sift the dry ingredients together and rub butter into the dry ingredients with fingers.
  2. Add enough water to form stiff dough. Knead the dough and then cool, covered, in the fridge for 30 minutes.
  3. Roll the dough out to 3mm thickness and cover a 25cm Quiche dish with the dough. Prick with a fork and cool again for 15 minutes.
  4. Pre-heat the oven to 200ºC and bake blind for 15 minutes.

 

For the filling:

4 chicken breasts (with skin and bones)

Salt and freshly ground black pepper, to taste

Paprika, to taste

30ml butter

250g fresh white button mushrooms, chopped

3 eggs

125ml milk

125ml cream

5ml baking powder

5ml mustard powder

15ml cake flour

Salt and freshly ground black pepper, to taste

Ground nutmeg, to taste

 

  1. Preheat the oven to 180ºC. Season the chicken with salt, pepper and paprika and bake covered for an hour.
  2. Remove from oven, cool and remove skin, debone and cube.
  3. Heat a pot and melt the butter. Brown the mushrooms.
  4. Mix the mushrooms and chicken and spoon onto the crust.
  5. Mix the eggs, milk, cream, baking powder, mustard powder, cake flour, salt, pepper and nutmeg together.
  6. Bake until the custard has set for approximately 30 minutes.

 

 

 

Long weekend, Cheese Festival, Simonstown

 I had a wonderful weekend again!! 

We were fortunate enough to go to the Cheese Festival at Bien Donne on Saturday, the 25th. Although the weather was not very nice (it rained almost the whole day) we have enjoyed the day tremendously. We all wore our rain boots and with the help of umbrellas we survived the rain and cold. We looked at a cooking demonstration of the delightful Nataniël, which, as always, was highly entertaining. He made the most beautiful tartlets, which seemed very easy to make and I am definitely going to make his Leek and Cheddar Tortilla for breakfast this coming weekend. After this session we all were very hungry, and unfortunately, since we were a large group, and the festival was packed and very crowded, it took forever to get something to eat (that suited everyone), so we missed Jenny Morris’s cooking demo. We sampled lots of cheese, wines and other delicacies and it was a most enjoyable outing!! 

I cooked a nice stew for lunch on Sunday. My Sister-in-law and her family that live inDelftinHollandarrived on Sunday night and we welcomed them with cinnamon sugar pancakes. 

On Monday, after breakfast, that consisted of Bacon, eggs, fried tomato and toast, we drove via Seapoint, Clifton, etc to Houtbay and from there via Constantia to Simonstown. We had lunch at Bertha’s in Simonstown. After lunch we went to Boulders Beach and their children was thrilled to see so many penguins. It was a wonderful drive. 

This whole week will be spending showing them all the nice places inCape Townand surrounds. It is very nice to do the tourist-thing again and I feel very, very blessed and fortunate to be able to do so many wonderful things!!

Saturday’s Breakfast

I am very much into breakfasts at the moment… !! This is what I have made this morning – I am sure I have seen a recipe for this on the Food24 website, but I could not find it this morning, so I have created my own. Line large Muffinpans (6) with bread to form a basket. Fry 250g of bacon and one onion till crisp. Spoon into breadbasket. Put in oven (180 degrees). Bake for 8 minutes. Meanwhile beat together 6 eggs, 50ml cream, salt and black pepper. Pour over Breadbaskets and top with some grated cheddar, bake for another 12 -15 minutes, till egg mixture has set. Serve with some tomato or fried mushrooms. Divine!! Here is a picture of this morning’s breakfast:
