Boerewors and Corn muffins

May 3, 2013 in Baking, Beef, Breakfast

I made these boerewors and corn muffins on a Saturday morning for breakfast with some left over boerewors of the braai we had the night before! Next time I am going to experiment with chorizo or pork bangers as the surprise in these muffins.

My family loved these, especially the boerewors surprise! They said it is like boerewors and pap in a muffin!

PinkPolkaDot’s hotdogs

April 11, 2013 in Baking, Lunch, Meals in minutes, Supper

Most of you know that I have three children so I am not ashamed to tell you that I have made quite a few hotdogs in my life. My children forever wanted to invite friends over for sleepovers and making a dozen or two hotdogs are quick and easy and luckily most children loves hotdogs.

I believe every person should have a good hotdog “recipe” for those days that you are really feeling uninspired to make lunch or supper. These hotdogs also provides a good excuse to drink a beer or two!

Old-fashioned apricot jam pudding

April 10, 2013 in Baking, Dessert

My mother used apricot jam quite often when she was cooking or baking. She had a whole repertoire of apricot jam recipes, from apricot jam biscuits to this apricot jam pudding.

Since this pudding needs to be baked twice, I do not make it often, but after reading  Ziet’s post about slow cooking I decided it was time to make this comfort food again. It is a perfect dessert for the winter.

I got the idea of baking the pudding in enamel mugs in the Sarie Kos!

The weekly menu

April 8, 2013 in Bacon, Baking, Beef, Braai, Chicken, Curry, Dessert, Meat, Meatless Mondays, Pork, Poultry, Seafood, Side Dish, Soup, Supper, Sweets, Weekly Meny

I never had time over the Easter weekend to do a menu for the week, but at last here is one for this week! I do acknowledge the fact that some people did not find the last menu budget friendly, but my excuse is that it was Easter and my family and I regard Easter as very special, so I went overboard with some of the dishes on the menu.

To see some budget friendly meals please visit fellow-blogger Sous Chef’s blog. Most of her blog posts are budget friendly, and I am just going to “borrow” some of her food posts to include in the weekly menu in feature.

For Monday:  Spicy butternut and orange soup with bread rolls

For Saturday: Buttery potato mash with beef burgundy

Dessert of the week: Apple filled pancakes with a caramel sauce

Almond Chocolate Cake

March 28, 2013 in Baking, Cake, Easter

I owned a coffee shop for a couple of years. Most of my regular customers and I became very good friends.

The one couple would visit the centre twice a week and the husband, an old Afrikaans professor would wait for his wife at the coffee shop whilst I had to keep him company. His wife gave this recipe to me and suggested I bake the cake for the coffee shop.

The recipe suggested that the cake should be dusted with icing sugar only but it never used to sell when I tried to present it like that so I started decorating it with chocolate ganache and fresh berries and my customers loved it. It is an expensive cake to bake, but is worthwhile for special occasions.

For the recipe please visit PinkPolkaDotFood.

I am wishing you all a wonderful and blessed Easter.

Chocolate biscuits for Easter

March 26, 2013 in Baking, Biscuits, Easter

As a child I never liked any chocolate flavoured things and neither did I like chocolate spread. I tasted chocolate spread once and did not like it and I never bothered to try it again.

I recently told my children that I have never tasted Nutella and they were horrified. They “forced” me to taste it and now I am addicted!

These chocolate biscuits are perfect for Easter. I used my Letterpress cookie set (available from Yuppiechef) to cut these biscuits but any cookie press can be used!

Sweet Biscuits for Easter

March 25, 2013 in Baking, Biscuits

I recently saw the idea for these cute little Easter biscuits in the latest edition of Home magazine. The biscuit recipe did not appeal to me so I made a batch of my Mother’s old-fashioned “soet koekies” (sweet biscuits) to create the same.

The biscuits are spread with Nutella. To see how to make your own Nutella buy a copy of the latest Fresh Living magazine.

I think most schools have already closed for the Easter holidays and you want to spend time with your loved ones. Therefore, I am sure that you do not want to spend too much time in the kitchen. Although most of the recipes in this week’s menu are not quick to prepare, I hope I will at least save you some time to decide what you are going to cook this week. I am also including a shopping list to make it even easier for you!

Tuesday: Pizza Quiche

Dessert for the week: Chocolate Tartlets

Treat for the week: Chocolate biscuits!
