The weekly menu

I never had time over the Easter weekend to do a menu for the week, but at last here is one for this week! I do acknowledge the fact that some people did not find the last menu budget friendly, but my excuse is that it was Easter and my family and I regard Easter as very special, so I went overboard with some of the dishes on the menu.

I think most schools have already closed for the Easter holidays and you want to spend time with your loved ones. Therefore, I am sure that you do not want to spend too much time in the kitchen. Although most of the recipes in this week’s menu are not quick to prepare, I hope I will at least save you some time to decide what you are going to cook this week. I am also including a shopping list to make it even easier for you!

Things in life do not always work out according to plan, but I strongly believe that God’s plan is always better. I was planning to attend the Eat-Out produce awards at the Old Biscuit Mill on Friday night where it was announced that the very talented Anel Potgieter from the blog “Life is a Zoo biscuit” is the Food Blogger of the year.

BlondieGirl was however writing a test on Friday morning and asked me to fetch her at 13:00 in Stellenbosch. I left earlier since I first wanted to go to an Antique shop in Stellenbosch and arrived at 12:30. Just after one BG phoned me to say that there was a terrible fire the previous night in Kayamandi that left 600 families (about 3000 people) homeless. She is on the Student Committee and her portfolio is Community Service and she had to do some things to arrange for volunteers, etc to assist the people affected by the fire. She asked whether I would be prepared to wait and help her with the arrangements for approximately 2 hours. Of course I said yes. In the end she only finished just before 18:00, which meant we could not attend the awards. I was admittedly not too upset as it felt good to be able to assist some fellow South Africans – albeit in a small, minute way.

This afternoon was mostly spent on preparing the weekly menu – I am so grateful that I am able to do this! I have a house, food and many luxuries that loads of people in South Africa does not have!

One of my friends asked me to post a weekly menu with a shopping list. Unfortunately I said yes, without realising how much work will go into something like that! This week I was challenged / asked by many more people to do this, so I did it again!

Crayfish with a sparkling wine sauce

Although I love crayfish, I don’t frequently serve it – it does however feature on my menu from time-to-time for special occasions. I usually prefer serving crayfish as a starter.

On this occasion I served crayfish with a sparkling wine sauce. The sparkling wine sauce is delicious and provides that extra sophistication to the crayfish. Prepare half a grayfish per person when serving as a starter and a whole one as a main dish.

This crayfish was cooked on the Weber, but can also be done on any other braai over medium coals. It can also be cooked in the oven at 180⁰C.

Although crayfish is currently on SASSI’s green list, it is under revision in terms of its WWF-SASSI sustainability rating.

So what are you waiting for, light the coals, open a bottle of sparkling wine, use some for the marinade and pour yourself a glass, whilst preparing this delicious meal?

One of my friends, who enjoys reading my blog, recently requested me to a weekly menu, with a list of the ingredients required. I agreed to this and this is my first weekly menu. I have never realised how much work it will be, but will try my best to do this on a weekly basis.

Please note that the ingredient list does not include general ingredients such as salt, pepper, oil, cake flour, milk, bread, sugar, eggs, butter, etc.

Monday: Lentil Bobotie with rice and tomato sambal and banana sambal

Tuesday: Chicken ghoulash served with tagliatelle

Wednesday: Curry banana frikadelle served with mashed potatoes and a green salad

Yellowtail with mushrooms, green peppercorns and lime

I love summer and since it is weekend, it is also braaitime. Not that we only braai over weekends … My husband would braai every night if I would allow that! We have been cooking a lot on our Weber lately and look out for posts soon on cooking a leg of lamb, pork belly and more on the Weber.

I bought a lot of frozen yellowtails recently at our local Fruit and Veg for R29.99 per kilo! This is a real bargain and since yellowtail is also on SASSI’s green list you can eat this with a clear conscience and with the knowledge that you are not further depleting our endangered fish species.

The first time around I cooked the yellowtail following a recipe for curry fish that is featured in the latest copy of House and Leisure’s food magazine.

After this I cooked the yellowtail with mushrooms, peppercorns and lime and this was also a winner!

Side dishes for the braai

It is summer, it is December, it is braai time in South Africa!

If my husband got his way, he would braai every night, especially during holidays. Recently he braai’d four nights in a row and told us he has compulsive braai disorder!

I could eat barbequed meat – whether it is lamb chops, chicken, fish, steaks, pork chops or boerewors, every night in a row for quite a while. The problem however is the side dishes. I cannot eat braaibroodjies twice in a row and although I love pap and sheba, I also do not want to eat it twice in one week!

Here are a couple of recipes for side dishes that goes well with a braai!

The first one can also be served as a main dish for vegetarians:

People regularly asked me for budget friendly recipes. Fish is in general a good choice since it is reasonably priced and provides essential proteins. It is also healthier than red meat. 

I found these Angelfish and my local supermarket and bought 4 large pieces for less than R30! That means I could feed four people for about R60 and that is really a bargain in my opinion!! 

Angelfish has a delicate flavour and should not be cooked to long to prevent it from becoming dry and falling apart. 

I used a few ingredients for this dish but it was really delicious!!

Lamb Sosaties

Recently I read on someone’s blog about lamb sosaties (I can unfortunately not remember on whose blog?). It reminded me of these lamb sosaties. Some years back, when we were still living in Pretoria, I was asked by our church to make 12 dozen lamb sosaties.

For weeks before the event I made sosaties, testing different marinades and flavour combinations. Friends and family was forced to eat sosaties for about 4 weeks in a row and this recipe was the one that everyone enjoyed the most. I made it a few times after this event and then got tired of it.

After reading about this lamb and dried apricot sosaties, I was so craving this that I just had to make it again. If you are looking for something really delicious to braai over the weekend, try this!
