Boerewors and Corn muffins

I made these boerewors and corn muffins on a Saturday morning for breakfast with some left over boerewors of the braai we had the night before! Next time I am going to experiment with chorizo or pork bangers as the surprise in these muffins.

My family loved these, especially the boerewors surprise! They said it is like boerewors and pap in a muffin!

Crumpets with a mint infused strawberry compote

I love crumpets and with this mixture from Sasko you can whip up a batch very quickly. I served this with mint infused strawberry compote, but you can serve the crumpets with honey, syrup or cheese or what ever you like. 

Strawberries are at its best and in abundance at the moment. This compote is very quick and easy to make and if you have any left over it can be drizzled over ice-cream or a fruit salad. You can make it in advance and keep it in the fridge for 3 days.

Bacon, Cheese and Peppadew Muffins

I cannot believe that it is the September holiday already. The last quarter of the year always passes so quickly because everyone is always so busy. Before we know it, it will be Christmas and then 2013!

If you are living with a teenager who brings home friends every single day, you will know that they are always hungry and always looking for something “nice” to eat. These muffins are perfect for breakfast, lunch or in-between meals.

I baked these in large muffin pans but bake it in smaller pans if you want to add it to a lunchbox or if it forms part of a savoury item to a tea party.

The muffins freezes very well, so double up to save time. Just take it out a couple of hours before serving or defrost it in the microwave.

Potato laktes with a curry sauce for Meatless Monday

It all started with JustChef! SousChef spoke to her on the phone and got it. I left a comment on SousChef’s Facebook wall and now I have it as well. I am talking about an awful cold!

To top it all, it is cold, grey and whet in Cape Town today. This curry dish will bring some warmth and colour into your life.

These latkes with a curry sauce are a great light dish on its own, served with some colourful vegetables. It is also a great side dish and goes well with boerewors, steaks or lamb chops.

PinkPolkaDot’s Scones

Over the years I have tried many recipes for scones. This old recipe is still my family’s favourite! I have been using this recipe, on and off, for more than 25 years. It is quick and easy to make!

The scones are delicious served with strawberry jam and cream or cheese. It is delicious served for breakfast or afternoon tea.

Long weekend, Cheese Festival, Simonstown

 I had a wonderful weekend again!! 

We were fortunate enough to go to the Cheese Festival at Bien Donne on Saturday, the 25th. Although the weather was not very nice (it rained almost the whole day) we have enjoyed the day tremendously. We all wore our rain boots and with the help of umbrellas we survived the rain and cold. We looked at a cooking demonstration of the delightful Nataniël, which, as always, was highly entertaining. He made the most beautiful tartlets, which seemed very easy to make and I am definitely going to make his Leek and Cheddar Tortilla for breakfast this coming weekend. After this session we all were very hungry, and unfortunately, since we were a large group, and the festival was packed and very crowded, it took forever to get something to eat (that suited everyone), so we missed Jenny Morris’s cooking demo. We sampled lots of cheese, wines and other delicacies and it was a most enjoyable outing!! 

I cooked a nice stew for lunch on Sunday. My Sister-in-law and her family that live inDelftinHollandarrived on Sunday night and we welcomed them with cinnamon sugar pancakes. 

On Monday, after breakfast, that consisted of Bacon, eggs, fried tomato and toast, we drove via Seapoint, Clifton, etc to Houtbay and from there via Constantia to Simonstown. We had lunch at Bertha’s in Simonstown. After lunch we went to Boulders Beach and their children was thrilled to see so many penguins. It was a wonderful drive. 

This whole week will be spending showing them all the nice places inCape Townand surrounds. It is very nice to do the tourist-thing again and I feel very, very blessed and fortunate to be able to do so many wonderful things!!

Beef Curry, Jac cats and Grilled Cheese Bread

I made beef curry for supper on Monday, 20 April….. !! Unfortunately we had to eat after eight because I got carried away with the blogging. My Hubby said… “Hmmmmmm…. the blogging is taking up a lo..o..o..ot of your time, but the food was delicious and worth the wait not withstanding the fact that we had to eat waayyyy after eight” …… Here is a Photo:

 

I went to fetch my daughter at Stellenbosch University, yesterday. Ate Lunch at the Stellenbosch Hotel’s Restaurant, Jan Cats. The Atmosphere was great, service efficient and the food very well presented and very tasty. We eat in Stellenbosch at least once a week and I always get the feeling that we were ripped off, but not at this restaurant. I will recommend them any time!!

 

Of Course I was toooooooooooo lazy to cook last night (after Lunch at Jan Cats) and I have made my special grilled cheese bread….. It is almost like Moo’s Welsh rarebit, but not like Welsh rarebit at all. Here is a photo….

 

 

 

 

 

Here is the recipe:

Mix  together: 125g grated cheddar cheese, 2ml salt, 7,5ml English mustard powder, 10ml Baking powder and 100ml of cream. Mix well until the mixture is spreadable. Spread over 6 slices of bread  and top with some paprika. Roast in a oven (preheated to 200° C), until mixture is puffed up and melted…  Enjoy!!

Well, the Children are back at school and the oldest back at University, and it is all quiet, just me and the dogs. I love it when my children are at home. They are always busy and coming and going. I love the energy in our house when they are around!!!

We have wonderful weather at the moment in Cape Town, beautiful, beautiful days. I feel very blessed to be living here. We went for a drive on Sunday. Our first stop was for breakfast at Hillcrest Berry Orchards. They are situated between Stellenbosch and Franschhoek. The Teagarden has a beautiful view over the mountains and the food is excellent. Service can sometimes be a bit slow, especially when they are busy, so do not go there if you are in a hurry. From there we drove to Somerset-west, Strand, Gordon’s Bay, Bettysbay, etc. We wanted to drive through to Hermanus, but stopped such a lot that we ended up having lunch at Kleinmond and then we browsed through all the small shops and by that time it was already late in the afternoon and time to return home.

Although my children are teenagers, they still insist on me getting and hiding easter eggs for them to search for on easter Monday… they are still such babies and love our traditions. So Monday morning was Easteregg time. Breakfast consisted of Fruit kebabs and Scones. Here is some photos of Monday’s Breakfast:

Saturday’s Breakfast

I am very much into breakfasts at the moment… !! This is what I have made this morning – I am sure I have seen a recipe for this on the Food24 website, but I could not find it this morning, so I have created my own. Line large Muffinpans (6) with bread to form a basket. Fry 250g of bacon and one onion till crisp. Spoon into breadbasket. Put in oven (180 degrees). Bake for 8 minutes. Meanwhile beat together 6 eggs, 50ml cream, salt and black pepper. Pour over Breadbaskets and top with some grated cheddar, bake for another 12 -15 minutes, till egg mixture has set. Serve with some tomato or fried mushrooms. Divine!! Here is a picture of this morning’s breakfast:
