Almond Chocolate Cake

I owned a coffee shop for a couple of years. Most of my regular customers and I became very good friends.

The one couple would visit the centre twice a week and the husband, an old Afrikaans professor would wait for his wife at the coffee shop whilst I had to keep him company. His wife gave this recipe to me and suggested I bake the cake for the coffee shop.

The recipe suggested that the cake should be dusted with icing sugar only but it never used to sell when I tried to present it like that so I started decorating it with chocolate ganache and fresh berries and my customers loved it. It is an expensive cake to bake, but is worthwhile for special occasions.

Yoghurt Cake

My sister mailed this recipe for a four minute cheese cake, containing only three ingredients to me a couple of weeks ago. There was no cheese to be seen in the ingredient list so I renamed it to a Yoghurt cake.

I was very curious to make it but my husband does not eat yoghurt and my two children who are at home do not enjoy cheesecake. I decided to make this as a treat for BG’s housemates on our visit to her, one Sunday.

The five of us, each had a small piece before we were going to leave the rest to her and her housemates, but o my word, it was absolutely delicious! My husband, children and I loved it. Neatless to say not much was left for the poor housemates!

I still can not believe that anything containing only three ingredients and which is so easy and quick to make can be as delicious!

Spicy cupcakes with sultanas

I would like to wish all of you a Merry Christmas. May your Christmas be filled with joy, happiness and peace!

I love traditional Fruit cake for Christmas, as well as traditional Christmas pudding with lots of fruit and spices. Unfortunately my husband and two of my children does not eat fruit cake or pudding. I always bake or buy a small amount of fruit mince pies for me and my one daughter, but this year I baked these spicy cupcakes with sultanas. Originally I wanted to make this with dried cranberries, but I had no cranberries left, so I made it with sultanas and it tasted really good!

I am serving this tonight after savoury finger food. Tomorrow I am going to make a chocolate pudding for dessert. I just love Christmas time, because I can cook and bake to my heart’s desire!

German Stollen for Christmas

This monthy Mingle is hosted by Junglefrog Cooking and the theme is Cooking Christmas Cakes. I enjoy partcipating in this event, which is the brainchild of the lovely Meeta of the blog What’s for lunch Honey?

This fruity cake is traditionally served for breakfast in Germany on Christmas day. Traditional stollen is wrapped around marzipan. Legend says that this symbolizes Christ child (the marzipan) wrapped in a blanket (the stollen). I do not put marzipan in my stollen.

The recipe is from my MIL’s German recipe book and I have posted it before here! My MIL bakes her stollen at the end of November or the beginning of December but I prefer to bake my stollen as close to the 25th as possible.

Chocolate cake with a fudge topping!

My daughters had their residence’s ladies tea, last Sunday. As always most of the mothers were expected to bake something to bring along.

I usually bake cupcakes, but I recently acquired a new Whirlpool grill and convection microwave, and I cannot stop experimenting.  I wanted to test all the options of my new microwave / convection oven so I made something different this year.

I decided on a chocolate cake, using my flop proof recipe. This chocolate cake recipe appeared years ago in a Hulletts recipe book. I have been
making this cake since the middle 80’s and Hubs made it numerous times for my birthday! It is not a very sweet cake or moist cake. I always smile when I read the recipe, because we did not have a kitchen scale in the 80’s. Hubs wrote all the ingredient requirements in millilitres on the recipe.

I have been craving fudge for some time, so I made fudge and turned part of it into a topping for the chocolate cake. You must bake the cake and make the fudge topping the day before serving. I made the fudge topping the morning before the event and unfortunately there was not enough time to cool down and let the topping set properly but nonetheless everyone said the cake was amazing. This fudge is made in the microwave and the recipe featured in the book, “Mikrogolf wenners”.

Individual Baby Pomegranates Cakes

Pomegranates? It was such a simple fruit when I grew up. Everyone had a pomegranate tree in their garden! We would pick the fruit from the tree and throw it on a paved area to break it. Some of the fruits were sweet and some were sour. We would dump the sour ones immediately and just pick another one!

It was only later that I realised that the taste of the fruit differed depending on the ripeness of the pomegranates, but luckily most of the pomegranate fruits were quite moderate in taste.

I have totally forgotten about this fruit and would only remember about it on our visits to my brother in Pretoria, where my children would still marvel in the wonder of the fruit on his pomegranate tree!

All of the sudden pomegranates became VERY popular, about 12 years ago! It also became very expensive! Luckily we still had a supply from my brother, when we were in Pretoria!

I have been craving pomegranates the last month or so and I wanted to make a pomegranate cake. After I lot of thinking I have decided to use my favourite butter cake as a basis for the pomegranate cake and although it was quite sweet, it was really delicious.

Wimbledon Cupcakes

It is time for Wimbledon and my three children, especially VG, who loves tennis, are glued to the television. 

When Food24 announced the Cupcake competition, I was wondering what on earth I would make. Luckily Wimbledon started on 20 June 2011 and I knew that it will have to be strawberries and cream cupcakes. 

Finding a strawberry cupcake recipe that is tasty proved to be harder than I thought. This was the third batch of cupcakes that I baked and since it is only the start of the strawberry season, strawberries are not really affordable at the moment. 

Luckily I found this cupcake recipe on allrecipes.com! (I changed it a little bit) 

 Wimbledon cupcake recipe

Ingredients for the cupcakes

250g strawberries, hulled and dusted with 30ml castor sugar (leave for at least an hour)

2 eggs

250ml white sugar

80ml vegetable oil

5ml vanilla extract

375ml cake flour

10ml baking powder

a pinch of salt

60ml milk 

Pre-heat the oven to 165ºC.

Line a cupcake pan with cupcake holders.

Place the strawberries into a blender and blend until the desired consistency (according to your taste). Set aside.

Beat the eggs, white sugar, oil, vanilla and strawberry puree together in a large bowl.

In a separate bowl sift the cake flour, baking powder and salt together.

Fold the flour mixture alternating with the milk a little bit at a time into the egg mixture. Mix until just combined, making sure not to over mix.

Spoon the mixture into the prepared muffin holders and fill each one about ²/³ full.

Bake for approximately 25 minutes, until the cupcakes have risen and browned. Test by inserting a toothpick into the centre of the cupcake and if it comes out clean the cupcakes are done.

Remove from the oven and cool down for 5 minutes in the pan before removing to cooling racks. Let the cupcakes cool down completely before decorating. 

Ingredients for the cream frosting

250ml double thick cream

2.5ml vanilla extract

15ml white sugar

6 strawberries hulled and sprinkled with 15ml castor sugar. Stand for 30 minutes. 

Place the cream, vanilla extract and sugar in a large mixing bowl and mix till combined.

Place the mixture and your electric beater’s whisks in the refrigerator and leave for 30 minutes.

Remove from the fridge and beat until soft peaks form.

Blend the strawberries into a puree and add to the cream, a little at a time, whilst beating continuously until stiff.

Use to decorate the cupcakes and add a halved strawberry on top. 

I made the cupcake holders according to the instructions found in the magazine Entertaining Ideas of summer 2010.

PinkPolkaDot’s Scones

Over the years I have tried many recipes for scones. This old recipe is still my family’s favourite! I have been using this recipe, on and off, for more than 25 years. It is quick and easy to make!

The scones are delicious served with strawberry jam and cream or cheese. It is delicious served for breakfast or afternoon tea.
