The weekly menu

I get lots of e-mails of people telling me how they appreciate the weekly menu with a shopping list and that makes this so worthwhile.

If you do not like any of the dishes on this week’s menu or feel that it is too expensive, simply replace it with a dish from the previous weekly menus!

Old-fashioned apricot jam pudding

My mother used apricot jam quite often when she was cooking or baking. She had a whole repertoire of apricot jam recipes, from apricot jam biscuits to this apricot jam pudding.

Since this pudding needs to be baked twice, I do not make it often, but after reading  Ziet’s post about slow cooking I decided it was time to make this comfort food again. It is a perfect dessert for the winter.

I got the idea of baking the pudding in enamel mugs in the Sarie Kos!

I never had time over the Easter weekend to do a menu for the week, but at last here is one for this week! I do acknowledge the fact that some people did not find the last menu budget friendly, but my excuse is that it was Easter and my family and I regard Easter as very special, so I went overboard with some of the dishes on the menu.

Things in life do not always work out according to plan, but I strongly believe that God’s plan is always better. I was planning to attend the Eat-Out produce awards at the Old Biscuit Mill on Friday night where it was announced that the very talented Anel Potgieter from the blog “Life is a Zoo biscuit” is the Food Blogger of the year.

BlondieGirl was however writing a test on Friday morning and asked me to fetch her at 13:00 in Stellenbosch. I left earlier since I first wanted to go to an Antique shop in Stellenbosch and arrived at 12:30. Just after one BG phoned me to say that there was a terrible fire the previous night in Kayamandi that left 600 families (about 3000 people) homeless. She is on the Student Committee and her portfolio is Community Service and she had to do some things to arrange for volunteers, etc to assist the people affected by the fire. She asked whether I would be prepared to wait and help her with the arrangements for approximately 2 hours. Of course I said yes. In the end she only finished just before 18:00, which meant we could not attend the awards. I was admittedly not too upset as it felt good to be able to assist some fellow South Africans – albeit in a small, minute way.

This afternoon was mostly spent on preparing the weekly menu – I am so grateful that I am able to do this! I have a house, food and many luxuries that loads of people in South Africa does not have!

One of my friends asked me to post a weekly menu with a shopping list. Unfortunately I said yes, without realising how much work will go into something like that! This week I was challenged / asked by many more people to do this, so I did it again!

Yoghurt Cake

My sister mailed this recipe for a four minute cheese cake, containing only three ingredients to me a couple of weeks ago. There was no cheese to be seen in the ingredient list so I renamed it to a Yoghurt cake.

I was very curious to make it but my husband does not eat yoghurt and my two children who are at home do not enjoy cheesecake. I decided to make this as a treat for BG’s housemates on our visit to her, one Sunday.

The five of us, each had a small piece before we were going to leave the rest to her and her housemates, but o my word, it was absolutely delicious! My husband, children and I loved it. Neatless to say not much was left for the poor housemates!

I still can not believe that anything containing only three ingredients and which is so easy and quick to make can be as delicious!

One of my friends, who enjoys reading my blog, recently requested me to a weekly menu, with a list of the ingredients required. I agreed to this and this is my first weekly menu. I have never realised how much work it will be, but will try my best to do this on a weekly basis.

Please note that the ingredient list does not include general ingredients such as salt, pepper, oil, cake flour, milk, bread, sugar, eggs, butter, etc.

Monday: Lentil Bobotie with rice and tomato sambal and banana sambal

Tuesday: Chicken ghoulash served with tagliatelle

Wednesday: Curry banana frikadelle served with mashed potatoes and a green salad

Blackberry Milkshake

This Blackberry milkshake is something quick and easy to whip up to spoil your loved ones. You can use any fresh or frozen berries. It makes one serving.

Berry milkshake

150ml milk

150ml vanilla ice cream

5 black berries

Place in a food processor and blend together. Serve immediately.

Recipe for mango ice cream with a mango coulis

Summer must be my favourite season, especially living in Cape Town, with the long sunny days. I love being outside in summer and going for walks on the beach and working in my garden.

The thing I love most about summer is the summer fruits! My favourite fruit is definitely “the king of fruits”, the nickname for mangoes.

Unfortunately the heat wave that we are experiencing in Cape Town is draining all my energy and I am feeling totally exhausted.

Luckily I could revive myself and cool down with this ice cream. Ice cream is one of my favourite treats, especially when combined with mangoes.
