MIM: Pasta with chorizo and peas

I like the combination of pasta with chorizo. The addition of peas to this pasta dish ensures that the family gets to eat some vegetables and small children will love this dish.

This is a quick and easy meal to prepare and is perfect to serve during the week, when there is simply not enough time to spend hours in front of the stove.

I used farfalle pasta, but you can use any type of pasta that you prefer and the chorizo can be replaced by bacon.

It is winter in Cape Town and very cold. When the weather is like this I just want to hibernate and do nothing. Although (as a surprise ;) ) I love cooking, I am always very lazy when it is this cold and just want to get food on the table as quickly as possible before a snuggle in front of the fire.

PinkPolkaDot’s hotdogs

Most of you know that I have three children so I am not ashamed to tell you that I have made quite a few hotdogs in my life. My children forever wanted to invite friends over for sleepovers and making a dozen or two hotdogs are quick and easy and luckily most children loves hotdogs.

I believe every person should have a good hotdog “recipe” for those days that you are really feeling uninspired to make lunch or supper. These hotdogs also provides a good excuse to drink a beer or two!

One of my friends, who enjoys reading my blog, recently requested me to a weekly menu, with a list of the ingredients required. I agreed to this and this is my first weekly menu. I have never realised how much work it will be, but will try my best to do this on a weekly basis.

Please note that the ingredient list does not include general ingredients such as salt, pepper, oil, cake flour, milk, bread, sugar, eggs, butter, etc.

Monday: Lentil Bobotie with rice and tomato sambal and banana sambal

Tuesday: Chicken ghoulash served with tagliatelle

Wednesday: Curry banana frikadelle served with mashed potatoes and a green salad

Hot tomato and Haloumi salad

I won some tickets to the Cape Dairy Experience and a cheese hamper from Karoo Goat’s milk products, late last year. Included in this hamper was some Halloumi cheese.

Since I wanted to emphasize the slightly salted taste of the halloumi I decided to make a hot tomato and fried halloumi salad and served it with some crusty bread as a light lunch. The salad can also be served as a starter.

Chicken and Mango salad

For me summer would not be the same without mangoes. I adore this wonderful versatile fruit and luckily it is available in South Africa from Decemeber to April.

Not only do I love to eat a mango as is but I also enjoy experimenting with it in all kinds of dishes as you will see with the mango ice cream I made recently and this mango mousse.

Brown rice tart with peppers and spinach

I am really trying to cook a bit healthier after all the indulgence over December. With this in mind I made this vegetarian tart using brown rice as a base for the tart. I used Tastic’s brown and wild rice with lentils, but any type of rice can be used.

This dish can be prepared in minutes if you use left over rice. My son, who normally does not eat spinach, enjoyed this as well. If he approves of a vegetarian dish, I think most children will happily eat this.

This brown rice tart can be served warm or cold, as a side dish or as a vegetarian main dish. It will also make a great picnic dish, when cut into slices, so it is a perfect dish for this time of year and since it is Meatless Monday, I think you should try this.
