This is a soup that you can make when you do not really feel like cooking! With just
a few ingredients and not much effort you can have a bowl of comforting soup
ready in minutes.
With the exception of me and BG none of my family members eat sweet potatoes! Can
you believe this? Normally I only cook sweet potatoes if we have people over
for supper or lunch. When I told Hubs that I am making soup with sweet potatoes
he was very sceptical but in the end he said that we should make it again!
This soup uses chilli stock cubes, so food connoisseurs will have to pass this. This
recipe was given to me by my friend Jacky, who never knows about quantities!

Oh, I was on such a roll today, I have been blogging and reading forever… all because… I have to work tomorrow and I have quite a lot to do!!
My Paella was just loved again tonight and I would like to share my recipe:
60 ml Olive Oi;
40 ml Butter
8 Chicken drumsticks or thighs (or a combination of the two)
2 onions, peeled and cubed
2 cloves garlic, crushed
1 each red, yellow and green pepper, cubed
1 tin whole peeled tomatoes
600ml Chicken stock
375ml uncooked Rice (preferably Spanish rice)
A pinch of saffron (or 10ml turmeric)
Salt and black pepper
16 large deveined prawns
400g mussels in shells (I could only find mussel meat today);
200g cubed hake fillets;
150g calamari rings;
1. Heat the Oil and butter in a Paella or large pan / pot. Brown the Chicken Pieces and remove with a slotted spoon.
2. Fry the Onion and Garlic until brown.
3. Add the peppers, tin of tomatoes and 300ml of the stock. Return the Chicken, cover and cook at low heat until the chicken is just done. (about 20 to 30 minutes);
4. Add the rice, the other 300ml stock, the saffron and season with salt and pepper. Cover and simmer until the rice is cooked and all the liquid is absorbed.
5. Add the cubed hake, calamari, prawns and mussels. Cook for another 8 minutes, until the prawns turn pink.
6. Serve with bread and salad.
This recipe serves 8, liberally!!
