The weekly menu

I think most schools have already closed for the Easter holidays and you want to spend time with your loved ones. Therefore, I am sure that you do not want to spend too much time in the kitchen. Although most of the recipes in this week’s menu are not quick to prepare, I hope I will at least save you some time to decide what you are going to cook this week. I am also including a shopping list to make it even easier for you!

One of my friends asked me to post a weekly menu with a shopping list. Unfortunately I said yes, without realising how much work will go into something like that! This week I was challenged / asked by many more people to do this, so I did it again!

One of my friends, who enjoys reading my blog, recently requested me to a weekly menu, with a list of the ingredients required. I agreed to this and this is my first weekly menu. I have never realised how much work it will be, but will try my best to do this on a weekly basis.

Please note that the ingredient list does not include general ingredients such as salt, pepper, oil, cake flour, milk, bread, sugar, eggs, butter, etc.

Monday: Lentil Bobotie with rice and tomato sambal and banana sambal

Tuesday: Chicken ghoulash served with tagliatelle

Wednesday: Curry banana frikadelle served with mashed potatoes and a green salad

Side dishes for the braai

It is summer, it is December, it is braai time in South Africa!

If my husband got his way, he would braai every night, especially during holidays. Recently he braai’d four nights in a row and told us he has compulsive braai disorder!

I could eat barbequed meat – whether it is lamb chops, chicken, fish, steaks, pork chops or boerewors, every night in a row for quite a while. The problem however is the side dishes. I cannot eat braaibroodjies twice in a row and although I love pap and sheba, I also do not want to eat it twice in one week!

Here are a couple of recipes for side dishes that goes well with a braai!

The first one can also be served as a main dish for vegetarians:

Vegetarian Pasta Dish for Meatless Monday

I am celebrating my new blog with a Mediterranean vegetarian pasta dish for meatless Mondays!

Both my daughters are home for the holidays and I am so happy. I always feel so contend when all my children are sleeping under the same roof as me! It was a wonderful weekend with wonderful weather and we had so much fun together.

After all the delicious food that we ate, it was time for something less extravagant and healthier! This dish can be easily prepared when you are on holiday and are delicious!

It seems like the judges on Dinner Divas enjoyed this dish that I made the most! They even said that everything should be removed and I should serve only THIS as a vegetarian dish! :)

….and it is true, you can get kids (of seventeen) to eat broccoli when you make it this way!

Spicy vegetables with chickpeas stew

I had a busy but very enjoyable weekend. There was not even time to read or write any blogs! L I will tell you more about my weekend later.

This is a great vegetarian dish for meatless Mondays. It is month-end fare either because your food budget is finished or you have to make do with whatever is left in the fridge or because you want to make space for fresh vegetables in the fridge.

I have used broccoli, cauliflower and baby corn, but butternut works very well and so does any marrows.

I served it with a baked potato, but it can be served with rice or couscous or as is, maybe with some fresh bread to soak up the sauce.

C O U L O R S and a vegetable pasta dish for spring!

One of my most beloved bloggers called SideView, post a theme very weekend, to inspire bloggers to blog over the weekend. The latest theme is Colours!

I cannot even begin to imagine what my life would be without colour!! I just love to see how the Western Cape turns from grey to green after the first winter rains! The same goes for the Highveld after the first summer rains!

I have taken so many photos of sunsets and every time I see another colourful one, I think it is better than the last!

Seeing a yellow sunflower or almost any yellow flower always instantly lifts my mood, it does not matter how miserable I was feeling.

I feel so privileged to stay in Cape Town and to see Table Mountain every day in different hues of colour! I cannot even begin to describe the colours of the ocean, which will sometimes be grey, and then turquoise or aqua green and the next moment it would be sluggish brown. The next day it might be crystal blue!

I think much of my enjoyment of food is also linked to colour, whether it is the colour of the food itself or the way it is presented on a colourful plate or table cloth!

Since spring has sprung in Cape Town we have been eaten a lot of meat and fish, because hubs soooo enjoys braaing, so tonight I have made something without meat and very summery.

If you feel like inviting a couple of friends over for dinner over the weekend you can impress them with this easy dish!! They will think you have been spending hours to create this.

As you will see in my last couple of posts, I have been making a lot of stir fry vegetable dishes lately. First it was this easy frittata and there after I made stir fry vegetables with a delicious creamy walnut dressing.

I started blogging in April 2009 after I had been reading some very inspiring food blogs on Food24. One of these blogs was the loveable Nina Timm’s My Easy Cooking.

Although I only met Nina last year, we immediately had a connection via cyberspace and I regard her as a very good friend.

Nina’s blog is very successful and she speaks on RSG every Thursday, just after nine and sometimes she invites fellow bloggers or foodies to her show. She is regarded as one of the leaders in food blogging in South Africa and also won the Eat In award in 2012 as the best food blogger.

I use to make this creamy dressing when I still had my coffee shop, but I had totally forgotten about it and how to make it. A couple of weeks ago one of my old customers stopped me in my local supermarket and told me how she misses the food at the Coffee shop and specifically the creamy dressing and asked for the recipe. Unfortunately I could not give it to her because I couldn’t remember it.

When Nina invited me to be her guest at RSG tomorrow, 6 September 2012, I started experimenting with the recipe for the creamy dressing  until it tasted as good as I could remember!

This dressing is very versatile and can be served on salads, with fish, chicken or with vegetables. I used to serve it with a chicken salad and a hot stir fried vegetable salad.
