Creamy butternut soup with stuffed rice balls

I would also like to thank Food24 for featuring most of my recipes for this competition on their home page. It is such a privilege to make something and to get such wonderful feedback!
I haven’t had time to really cook or bake anything else that I could post on my blog, since the start of this competition. The competition is taking all my free time. Sometimes I had to create two or even three dishes with the ingredients given in the challenges before I was happy.
For challenge number seven we had to make something with Spekko rice, butternut, leeks, thyme, tinned tomatoes and a baguette. We could leave out one ingredient, except the rice. We could add two ingredients, of which one had to be from the dairy section and any other ingredient that we could find in Pick n Pay.
Rice is a staple in my house and I was very excited when I received the ingredients. The difficult thing was to decide on one dish. Initially I made a butternut and leek quiche with a rice base in accordance to one of my most visited recipes on my blog.
In the end I decided to make these rice balls, since I wanted the rice to be the main feature of the dish. To read more, please visit PinkPolkaDotFood!
