An easy recipe for a tomato and basil tart

I made this tomato and basil tart, because I have an abudance of tomatoes growing in my vegatable garden. Since I love tomatoes and use them daily I am very happy with this high amount of tomatoes available to me.

Since the basil is also from my own garden, this dish virtually costed me almost nothing – very important in January!

I used basil pesto from the Pesto Princess range. Although it is very easy to make your own pesto, I find the pesto from Pesto Princess extremely delicious and affordable! I think this pesto made this dish! I did not add any seasoning, but do so if you wish.

I served this as a side dish, but it will also make a good main dish for a light lunch or supper.

Side dishes for the braai

It is summer, it is December, it is braai time in South Africa!

If my husband got his way, he would braai every night, especially during holidays. Recently he braai’d four nights in a row and told us he has compulsive braai disorder!

I could eat barbequed meat – whether it is lamb chops, chicken, fish, steaks, pork chops or boerewors, every night in a row for quite a while. The problem however is the side dishes. I cannot eat braaibroodjies twice in a row and although I love pap and sheba, I also do not want to eat it twice in one week!

Here are a couple of recipes for side dishes that goes well with a braai!

The first one can also be served as a main dish for vegetarians:

MIM 15: Stuffed Chicken breasts wrapped in bacon

I had the most wonderful Easter Weekend. We spent the weekend at home and because it was raining, the most part of the weekend was spent indoors. We cooked, baked and had fun together as a family. 

We went to the movies and saw the movie Titanic. It was the first time that my children saw this in a cinema because they were too young when it was first released. Although we enjoyed it a lot, we all cried a lot. Titanic is really an epic film which I can watch over and over again. 

Unfortunately the girls went back to Stellenbosch this morning and for the first time in years; I had the Sunday blues (on a Monday)! The schools are also opening again tomorrow for the second term so Boykie will be back at school. I just cannot believe that it is April already!! 

I use to make a meal in minutes on Wednesday nights, but since Masterchef SA is now showing on the television on a Tuesday night I make my quick and easy meals now on a Tuesday night. This dish is very quick to prepare and also economical because boned-in chicken breasts are very affordable.
