Almond Chocolate Cake

I owned a coffee shop for a couple of years. Most of my regular customers and I became very good friends.

The one couple would visit the centre twice a week and the husband, an old Afrikaans professor would wait for his wife at the coffee shop whilst I had to keep him company. His wife gave this recipe to me and suggested I bake the cake for the coffee shop.

The recipe suggested that the cake should be dusted with icing sugar only but it never used to sell when I tried to present it like that so I started decorating it with chocolate ganache and fresh berries and my customers loved it. It is an expensive cake to bake, but is worthwhile for special occasions.

Yoghurt Cake

My sister mailed this recipe for a four minute cheese cake, containing only three ingredients to me a couple of weeks ago. There was no cheese to be seen in the ingredient list so I renamed it to a Yoghurt cake.

I was very curious to make it but my husband does not eat yoghurt and my two children who are at home do not enjoy cheesecake. I decided to make this as a treat for BG’s housemates on our visit to her, one Sunday.

The five of us, each had a small piece before we were going to leave the rest to her and her housemates, but o my word, it was absolutely delicious! My husband, children and I loved it. Neatless to say not much was left for the poor housemates!

I still can not believe that anything containing only three ingredients and which is so easy and quick to make can be as delicious!

Individual Baby Pomegranates Cakes

Pomegranates? It was such a simple fruit when I grew up. Everyone had a pomegranate tree in their garden! We would pick the fruit from the tree and throw it on a paved area to break it. Some of the fruits were sweet and some were sour. We would dump the sour ones immediately and just pick another one!

It was only later that I realised that the taste of the fruit differed depending on the ripeness of the pomegranates, but luckily most of the pomegranate fruits were quite moderate in taste.

I have totally forgotten about this fruit and would only remember about it on our visits to my brother in Pretoria, where my children would still marvel in the wonder of the fruit on his pomegranate tree!

All of the sudden pomegranates became VERY popular, about 12 years ago! It also became very expensive! Luckily we still had a supply from my brother, when we were in Pretoria!

I have been craving pomegranates the last month or so and I wanted to make a pomegranate cake. After I lot of thinking I have decided to use my favourite butter cake as a basis for the pomegranate cake and although it was quite sweet, it was really delicious.

Chocolate Swiss roll with orange mousse filling

I love the combination of chocolate and orange. I think it goes together like strawberries and cream or bacon and eggs. 

When I was just married, many years ago, I baked something delicious every Saturday. Hubs and I would have some with coffee on the Saturday .The rest would be eaten on Sunday afternoon when my brother or sister or in-laws normally came for coffee. I used to make a traditionally Swiss roll often in those years, but haven’t made any Swiss rolls recently. 

Since I have been craving citrus fruit recently, I decided to make this chocolate Swiss roll with an orange filling. It is not too sweet, but the flavours work very well together. It is very easy to make. You can also fill the Swiss roll with apricot or strawberry jam or some chocolate butter icing if you do not want to make the orange filling.
