Brown rice tart with peppers and spinach

I am really trying to cook a bit healthier after all the indulgence over December. With this in mind I made this vegetarian tart using brown rice as a base for the tart. I used Tastic’s brown and wild rice with lentils, but any type of rice can be used.

This dish can be prepared in minutes if you use left over rice. My son, who normally does not eat spinach, enjoyed this as well. If he approves of a vegetarian dish, I think most children will happily eat this.

This brown rice tart can be served warm or cold, as a side dish or as a vegetarian main dish. It will also make a great picnic dish, when cut into slices, so it is a perfect dish for this time of year and since it is Meatless Monday, I think you should try this.

Chicken stuffed with cranberry jelly

It is almost holiday time! I don’t know about you, but in my household there are always a couple of more mouths to feed during this time! I also like the idea of preparing something more festive- like during December!

To me chicken is always a good choice and it is not too expensive. Cranberry jelly is quite expensive but with one can or bottle, you can do a lot!

This chicken dish is perfect for this time of year!

On a personal note: Both my daughters finished with exams, but the one, sadly, must re-write one of her exams. This means the she will not get her degree in December but only in March. :(   My other (younger) daughter passed all her subjects and will be getting her degree on 12 December 2012. I am extremely proud of her, because she did not fail one exam during the past three years. She is also on the Stellenbosch student council in the position of community service leader. She has been doing so many community-based projects this year and she has been spending a lot of her time on this. She is so passionate about people and will do anything to uplift the community.

Angelfish with basil pesto and tomatoes

People regularly asked me for budget friendly recipes. Fish is in general a good choice since it is reasonably priced and provides essential proteins. It is also healthier than red meat. 

I found these Angelfish and my local supermarket and bought 4 large pieces for less than R30! That means I could feed four people for about R60 and that is really a bargain in my opinion!! 

Angelfish has a delicate flavour and should not be cooked to long to prevent it from becoming dry and falling apart. 

I used a few ingredients for this dish but it was really delicious!!

Bacon, avocado and feta soup

Avocado is one of my most favourite fruits. In it’s simplest form, sliced on a slice of bread or glamorized in any other form, I just love it. It is one of my most favourite pizza toppings and I still think the combination of bacon, avocado and feta is a match made in heaven (this soup was created in honour of this wonderful combination). My brother eats avocado with syrup on bread. I always thought this to be a very odd combination, but he loves it.

Hubs grew up on a farm near Hazyview and one of the fruits that were farmed with was avocados, but he dislikes avocado in any form. His brother is still farming there and he also dislikes avocados. He went as far as removing all the avocado trees on the farm, saying it farms as badly as it tastes!

Although avocados are sometimes called avocado pears, they are not related to the pear family at all and are only called that because of its resemblance to pears. The Taiwanese eat avocados with milk and sugar and Filipinos puree them with milk and sugar to make a drink that is eaten after meals. (Maybe this is where my brother got his avo-syrup idea from?!) The Indonesians mix avocados with milk, coffee and rum! Avocados are also used in facial and body products. The leaves of the avocado tree can also be used in both fresh and dried form. One of the most creative avocado dishes that I have heard about was an avocado chocolate mousse recipe on the blog of “Daily dose of fresh”. You can find the recipe here!

As a teenager I believed that avocados were a totally no, no, because it was fattening! But now we know that the fats in avocados are good fats which
can reduce cholesterol levels. Avocados also have the highest protein content of any fruit. It is also considered as one of the healthiest foods on the planet because it contains valuable essential nutrients, including vitamins A, B, C and E, and iron, magnesium and potassium.

I am still intrigued with my posts on this day in previous years! I did not post anything on 20 June 2011 or 20 June 2010. On 20 June 2009 I post a picture of our breakfast that consisted of banana bread and choc chip muffins!

MIM 15: Stuffed Chicken breasts wrapped in bacon

I had the most wonderful Easter Weekend. We spent the weekend at home and because it was raining, the most part of the weekend was spent indoors. We cooked, baked and had fun together as a family. 

We went to the movies and saw the movie Titanic. It was the first time that my children saw this in a cinema because they were too young when it was first released. Although we enjoyed it a lot, we all cried a lot. Titanic is really an epic film which I can watch over and over again. 

Unfortunately the girls went back to Stellenbosch this morning and for the first time in years; I had the Sunday blues (on a Monday)! The schools are also opening again tomorrow for the second term so Boykie will be back at school. I just cannot believe that it is April already!! 

I use to make a meal in minutes on Wednesday nights, but since Masterchef SA is now showing on the television on a Tuesday night I make my quick and easy meals now on a Tuesday night. This dish is very quick to prepare and also economical because boned-in chicken breasts are very affordable.
