The weekly menu

I get lots of e-mails of people telling me how they appreciate the weekly menu with a shopping list and that makes this so worthwhile.

If you do not like any of the dishes on this week’s menu or feel that it is too expensive, simply replace it with a dish from the previous weekly menus!

I never had time over the Easter weekend to do a menu for the week, but at last here is one for this week! I do acknowledge the fact that some people did not find the last menu budget friendly, but my excuse is that it was Easter and my family and I regard Easter as very special, so I went overboard with some of the dishes on the menu.

I think most schools have already closed for the Easter holidays and you want to spend time with your loved ones. Therefore, I am sure that you do not want to spend too much time in the kitchen. Although most of the recipes in this week’s menu are not quick to prepare, I hope I will at least save you some time to decide what you are going to cook this week. I am also including a shopping list to make it even easier for you!

Things in life do not always work out according to plan, but I strongly believe that God’s plan is always better. I was planning to attend the Eat-Out produce awards at the Old Biscuit Mill on Friday night where it was announced that the very talented Anel Potgieter from the blog “Life is a Zoo biscuit” is the Food Blogger of the year.

BlondieGirl was however writing a test on Friday morning and asked me to fetch her at 13:00 in Stellenbosch. I left earlier since I first wanted to go to an Antique shop in Stellenbosch and arrived at 12:30. Just after one BG phoned me to say that there was a terrible fire the previous night in Kayamandi that left 600 families (about 3000 people) homeless. She is on the Student Committee and her portfolio is Community Service and she had to do some things to arrange for volunteers, etc to assist the people affected by the fire. She asked whether I would be prepared to wait and help her with the arrangements for approximately 2 hours. Of course I said yes. In the end she only finished just before 18:00, which meant we could not attend the awards. I was admittedly not too upset as it felt good to be able to assist some fellow South Africans – albeit in a small, minute way.

This afternoon was mostly spent on preparing the weekly menu – I am so grateful that I am able to do this! I have a house, food and many luxuries that loads of people in South Africa does not have!

One of my friends asked me to post a weekly menu with a shopping list. Unfortunately I said yes, without realising how much work will go into something like that! This week I was challenged / asked by many more people to do this, so I did it again!

Lamb Sosaties

Recently I read on someone’s blog about lamb sosaties (I can unfortunately not remember on whose blog?). It reminded me of these lamb sosaties. Some years back, when we were still living in Pretoria, I was asked by our church to make 12 dozen lamb sosaties.

For weeks before the event I made sosaties, testing different marinades and flavour combinations. Friends and family was forced to eat sosaties for about 4 weeks in a row and this recipe was the one that everyone enjoyed the most. I made it a few times after this event and then got tired of it.

After reading about this lamb and dried apricot sosaties, I was so craving this that I just had to make it again. If you are looking for something really delicious to braai over the weekend, try this!

Rack of lamb with lemon and garlic

Meat is very expensive at the moment. You can easily pay R129.99/kg for lamb chops or steak. Even mince costs approximately R70/kg. It is far more affordable to buy meat in bulk, if you have freezing capacity. Our local Checkers recently sold lamb at R49.99/kg and I am already sorry that I did not buy two lambs.                                                           

I will however never buy pre-cut lamb since I prefer my lamb to be cut in specific cuts as follows:

The leg of lamb – both whole (with the shanks removed);

All 4 shanks whole (not sliced into knuckles);

The rib whole with the flap attached;

2 whole racks;

1 whole shoulder;

the neck, sliced and

the rest sliced into chops.

I crave citrus fruit at the moment. As you will see in recent posts, Mushroom and lemon risotto and Aubergine and bocconcini salad, lemon are my favourite ingredient at the moment, after salt, onions, olive oil, butter, basil….. Ok I can not make up my mind!

Harira (Maroccan Lamb and Chickpea soup)

Harira (Moroccan Lamb and chickpea soup)


 

 

It seems like Mintea is inspiring all of us to make Moroccan food!! I have tasted Harira a couple of years ago for the first time and I was hooked. I have been trying to perfect the recipe ever since, but I am still feeling that it is not quite right. I will highly appreciate it if you could tell me what I should add or change to my recipe or if you could post another recipe for me!! Here is the recipe that I use:

Ingredients:

30ml Olive Oil

1 large onion, chopped

10ml ground ginger

15ml ground cumin

5ml ground cinnamon

10ml ground coriander

6 saffron threads

3 chopped celery sticks

500g deboned shoulder or leg of lamb, cubed

2 x 400g tinned tomatoes

2l water

1 x 410g can of drained chick peas

100g (125ml) brown lentils

125ml chopped fresh coriander leaves

1.
Heat oil in a large heavy-based pot; cook onion until soft.

2. Add spices, cook for 2 minutes, stirring all the time.

3. Add lamb and celery and cook for 3 minutes whilst stirring to coat lamb with the spices.

4. Add tomatoes and cook for another 2 minutes.

5. Stir in the water and chick peas, bring to a boil, simmer covered for about 1½ hours or till the lamb is tender. Stir occasionally.

6. Stir in lentils, cook for another 30 minutes covered, till the lentils are soft.

7. Just before serving, stir fresh coriander into soup.

NOTES:

· I used thyme in the place of fresh coriander, because I do not like coriander.

· I added 5ml salt and some black pepper to the soup.

· I thickened the soup with 10ml cornflour, mixed with a little bit of cold water, because I prefer a thicker consistency.
