Stumpnose fish stuffed with couscous

My son will soon be seventeen and he is at an age now where he wants to go out every Friday and Saturday night. My daughters never went out so often. Initially I was not very happy with his continuous outings to friends, the movies, the Spur, etc but I have decided, for my own sanity, to allow him to go out, but under specific rules. The worst is that he does not want me to take or fetch him but he catches the MyCity bus on his outings. It was extremely difficult for me initially but I am now (sort of) getting used to this.  

Some of his requests to go out entail some cultural activities, which I am very glad about. About a month ago he and his friends went to Artscape to see “A Midsummer Night’s Dream” and on Saturday night they went to see “Hairspray”, a play that one of the local schools is currently performing. 

It is at nights, when we are alone at home that Hubs and I are having great fun experimenting!  ;) Most of you who read my blog frequently will know that my son is not a very adventurous eater. He eats meat, pasta, calamari and prawns and will only eat battered hake and maybe some snoek. 

So, on Saturday, we bought some stumpnose. After much debate, we made a compromise. Hubs could cook it on the braai, but I will prepare it. :)

I decided to stuff the flacked fish and looked what was available in the pantry and in the fridge. Eventually I decided to keep it very simple and stuffed it with a couscous mixture.
