Most of you know that I have three children so I am not ashamed to tell you that I have made quite a few hotdogs in my life. My children forever wanted to invite friends over for sleepovers and making a dozen or two hotdogs are quick and easy and luckily most children loves hotdogs.

I believe every person should have a good hotdog “recipe” for those days that you are really feeling uninspired to make lunch or supper. These hotdogs also provides a good excuse to drink a beer or two!

One of my friends asked me to post a weekly menu with a shopping list. Unfortunately I said yes, without realising how much work will go into something like that! This week I was challenged / asked by many more people to do this, so I did it again!

Hot tomato and Haloumi salad

I won some tickets to the Cape Dairy Experience and a cheese hamper from Karoo Goat’s milk products, late last year. Included in this hamper was some Halloumi cheese.

Since I wanted to emphasize the slightly salted taste of the halloumi I decided to make a hot tomato and fried halloumi salad and served it with some crusty bread as a light lunch. The salad can also be served as a starter.

Brown rice tart with peppers and spinach

I am really trying to cook a bit healthier after all the indulgence over December. With this in mind I made this vegetarian tart using brown rice as a base for the tart. I used Tastic’s brown and wild rice with lentils, but any type of rice can be used.

This dish can be prepared in minutes if you use left over rice. My son, who normally does not eat spinach, enjoyed this as well. If he approves of a vegetarian dish, I think most children will happily eat this.

This brown rice tart can be served warm or cold, as a side dish or as a vegetarian main dish. It will also make a great picnic dish, when cut into slices, so it is a perfect dish for this time of year and since it is Meatless Monday, I think you should try this.

Vegetarian Quiche

Angelfish with basil pesto and tomatoes

People regularly asked me for budget friendly recipes. Fish is in general a good choice since it is reasonably priced and provides essential proteins. It is also healthier than red meat. 

I found these Angelfish and my local supermarket and bought 4 large pieces for less than R30! That means I could feed four people for about R60 and that is really a bargain in my opinion!! 

Angelfish has a delicate flavour and should not be cooked to long to prevent it from becoming dry and falling apart. 

I used a few ingredients for this dish but it was really delicious!!

MIM: Chilli chicken stir-fry with macadamia nuts

This delicious chicken stir-fry can be made in minutes and you only use a few ingredients. Served with rice, it is a quick dish that can be prepared during the week when you don’t have time or energy to spent hours in the kitchen.

Although macadamia nuts contain a lot of fat, the majority of the fat is in the form of monounsaturated fatty acids that is good for your heart.

Macadamia nuts are my favourite nuts. You can replace them with any other nuts that you prefer such as walnuts or cashew nuts.

Stir fry vegetable frittata for Meatless Mondays

People often ask me what I always have in my fridge and pantry. Except for the obvious things, like milk, butter, cheese, rice, etc, I always have eggs available.

I love eggs. It is so versatile. I am not a morning person, but you can get me out of bed immediately when you offer me a soft baked or boiled egg with a slice of toast!

When me son gets unexpected hungry friends over, (and teenagers are always hungry) I often whip up omelettes.  Sometimes I will fill it with cheese or left over mince or chicken and other times it will be plain.

I also love a frittata. A frittata is an open omelette and contains at least one optional ingredient. This can be herbs, vegetables, etc. A frittata is usually divided into slices and eaten by a couple of people. It can be eaten hot or cold with a salad, vegetables, bread, etc.

Kingklip with a mushroom crust for Father’s Day

Although I love kingklip, I do not buy it often since it is on SASSI’s orange list, meaning that the species are depleted, either due to over fishing or the way the fish has been caught. For more information about Kingklip on SASSI’s list, go here.

It used to be one of my most favourite orders in Restaurants and preferred fish for home cooking. Lately I only eat it on special occasions and Father’s day is such an occasion.

Sweet potato soup

This is a soup that you can make when you do not really feel like cooking! With just
a few ingredients and not much effort you can have a bowl of comforting soup
ready in minutes.

With the exception of me and BG none of my family members eat sweet potatoes! Can
you believe this? Normally I only cook sweet potatoes if we have people over
for supper or lunch. When I told Hubs that I am making soup with sweet potatoes
he was very sceptical but in the end he said that we should make it again!

This soup uses chilli stock cubes, so food connoisseurs will have to pass this. This
recipe was given to me by my friend Jacky, who never knows about quantities! :)
