The weekly menu

I get lots of e-mails of people telling me how they appreciate the weekly menu with a shopping list and that makes this so worthwhile.

If you do not like any of the dishes on this week’s menu or feel that it is too expensive, simply replace it with a dish from the previous weekly menus!

I never had time over the Easter weekend to do a menu for the week, but at last here is one for this week! I do acknowledge the fact that some people did not find the last menu budget friendly, but my excuse is that it was Easter and my family and I regard Easter as very special, so I went overboard with some of the dishes on the menu.

I think most schools have already closed for the Easter holidays and you want to spend time with your loved ones. Therefore, I am sure that you do not want to spend too much time in the kitchen. Although most of the recipes in this week’s menu are not quick to prepare, I hope I will at least save you some time to decide what you are going to cook this week. I am also including a shopping list to make it even easier for you!

Things in life do not always work out according to plan, but I strongly believe that God’s plan is always better. I was planning to attend the Eat-Out produce awards at the Old Biscuit Mill on Friday night where it was announced that the very talented Anel Potgieter from the blog “Life is a Zoo biscuit” is the Food Blogger of the year.

BlondieGirl was however writing a test on Friday morning and asked me to fetch her at 13:00 in Stellenbosch. I left earlier since I first wanted to go to an Antique shop in Stellenbosch and arrived at 12:30. Just after one BG phoned me to say that there was a terrible fire the previous night in Kayamandi that left 600 families (about 3000 people) homeless. She is on the Student Committee and her portfolio is Community Service and she had to do some things to arrange for volunteers, etc to assist the people affected by the fire. She asked whether I would be prepared to wait and help her with the arrangements for approximately 2 hours. Of course I said yes. In the end she only finished just before 18:00, which meant we could not attend the awards. I was admittedly not too upset as it felt good to be able to assist some fellow South Africans – albeit in a small, minute way.

This afternoon was mostly spent on preparing the weekly menu – I am so grateful that I am able to do this! I have a house, food and many luxuries that loads of people in South Africa does not have!

Old Fashioned Venison Pie

My Mother’s venison pie was the best in the world, so when one of Hubby’s friends recently gave him some springbok meat, I immediately start searching for my Mother’s recipe.

I could unfortunately not find her recipe, but found a recipe by Carmen Niehaus that sounded close to my Mother’s recipe. I adapted this recipe to make my Mother’s old fashioned venison pie and this was the best venison pie that I have ever tasted!

Beef fillet with red peppercorns and mushrooms

I love fillet steak, but it is very expensive. In Cape Town you can easily pay R200 per kilogram. If you have a family like mine who eats large portions of meat, it becomes very expensive to buy beef fillet.

I went to Malmesbury, recently, to fetch my son’s ID book and one of the butcheries was selling beef fillet for less than half the price that we pay in Cape Town. Of course I had to stock up.

Some people say that fillet is tasteless, but I love it. My favourite way of cooking fillet can be found here or try this beef fillet and radicchio salad.

I just love the simplicity of this recipe! Just remember that red peppercorns are very hot!

Ginger and Soy Stir Fry Pork with Jasmine Rice

Ginger is one of those things that people either love or hate. I enjoy the taste a lot.

Chilli Con Carne with a potato topping

Chilli con carne is a wonderful one-pot dish.  It is known as THE campfire dish made by cowboys! To me it brings back memories of John Wayne, sitting all alone next to his campfire, (with his horse, of course) and opening a tin of beans and a tin of tomatoes and mixing it with some meat, to cook the perfect Chilli Con Carne!

I use to make Chilli Con Carne quite often in the 80’s. At that stage you could buy tinned Chilli beans, and I used that for my chilli con carne. I also used cubed beef and never minced meat. The recipe that I used at that stage was the following:Heat 1 tablespoon of oil and 1 tablespoon of butter in a pot on the stove. Brown 125g of cubed bacon, 500g cubed beef, 2 chopped onions and 2 cloves of garlic in the butter-oil mixture. Add 125ml water, 1 x 400g tin of chilli beans, 1 x 400g tin of whole peeled tomatoes. Season with salt and pepper and sauté very slowly for 2 hours.

For some or the other reason I stopped making this delicious dish when my children was young, firstly because I thought they should not eat chillies and secondly because I thought they won’t enjoy the beans.

Luckily VG asked me to make this about a year ago and now it serves regularly on our menu and even my son loves it! I have adapted the recipe completely and now use minced beef for this. This specific version is the chilli con carne, covered with some partially cooked sliced potatoes and baked in the oven! Real delicious winter food!

Pork and Pineapple kebabs

My Hubby use to love playing in the kitchen, but has not done it for the past couple of years. At last he got his mojo back and did he play this weekend!! Most of his food creations are either done on the braai or on the Weber. 

The past weekend he took out his smoker and smoked some fish and chicken fillets. Especially the chicken fillets are delicious and I think it taste far better than any other smoked chicken that I have bought before. 

He also made this pork and pineapple kebabs which were delicious.

I could only safe two of them to take some photos!
