Mushroom stew

I plan my dinners mostly around the seasons so I have made a lot of stews and curries lately. Unfortunately after a couple of very cold days the Cape Town weather turned to summer again, so I did not feel comfortable posting recipes that is supposed to be eaten in colder weather. I can however no longer wait to share this mushroom stew recipe with you.

This is a great vegetarian dish that can be served with any type of starch you like!

Old-fashioned stuffed mushrooms

Stuffed mushrooms were a hit in the eighties and I made it often as a starter. Both my daughters adore mushrooms so I made these stuffed mushrooms for the first time in years in December 2012. I was quite surprised -no shocked when they asked me to make those old-fashioned mushrooms again! I thought old-fashioned only applies to things that happened in my Mother’s youth! Well, I must admit that they are really old-school.

Stuffed mushrooms are a great starter to serve at a braai, since you do not really need a plate. The mushroom is the plate for this delicious filling and you only need one free hand, so your other hand is still available for a drink of your choice!

It is Monday and time for some vegetarian fare. Mushrooms are so healthy, delicious and versatile and a good replacement for meat.

This dish is very quick to prepare and I have used a frozen corn and pea mixture, but you can use fresh peas on its own if you like.

Stir fry vegetable frittata for Meatless Mondays

People often ask me what I always have in my fridge and pantry. Except for the obvious things, like milk, butter, cheese, rice, etc, I always have eggs available.

I love eggs. It is so versatile. I am not a morning person, but you can get me out of bed immediately when you offer me a soft baked or boiled egg with a slice of toast!

When me son gets unexpected hungry friends over, (and teenagers are always hungry) I often whip up omelettes.  Sometimes I will fill it with cheese or left over mince or chicken and other times it will be plain.

I also love a frittata. A frittata is an open omelette and contains at least one optional ingredient. This can be herbs, vegetables, etc. A frittata is usually divided into slices and eaten by a couple of people. It can be eaten hot or cold with a salad, vegetables, bread, etc.

Potato laktes with a curry sauce for Meatless Monday

It all started with JustChef! SousChef spoke to her on the phone and got it. I left a comment on SousChef’s Facebook wall and now I have it as well. I am talking about an awful cold!

To top it all, it is cold, grey and whet in Cape Town today. This curry dish will bring some warmth and colour into your life.

These latkes with a curry sauce are a great light dish on its own, served with some colourful vegetables. It is also a great side dish and goes well with boerewors, steaks or lamb chops.

Onion, Cheese and Thyme Quiche

Both my daughters were at home the last couple of days and I have enjoyed it so much! We talked and laughed and shopped and cooked together and there was hardly time to do anything else.

They both are finished writing exams and VG passed all her subjects! J BG’s results are not available yet, but I am convinced that she would be doing very well. She went to Zambia today. She will be there for three weeks, working at Chimfunshi as a volunteer. After this she will be at my MIL for two weeks on the farm between Sabie and Hazyview. I am already missing her terribly!

Luckily VG and Boykie is with us and I am enjoying them so much. They are so busy and bring such wonderful positive energy home. VG is very sad about the tennis, because her dearest Federer did not make the finals, but she is extremely happy that Sharopva won the women’s title!

Back to food, this Quiche were absolutely delicious and enjoyed by all of us, even Boykie!! One of the few vegetables he loves are onions!! So he thought this was great!

Mushroom Pot Pies for Meatless Mondays

The girls and I went to the Stellenbosch Fresh Goods Market on Saturday. This is one of our favourite places to go to for breakfast or lunch on a Saturday.

Since BG wrote exam until 12:00, we went there for lunch. The girls both had “bockwurst on a brotchen”. I was torn between a wonderful mushroom kebab, with a variety of exotic mushrooms or mussels. In the end I decided to go for the mussels and it was a great choice! I got seven plumb mussels steamed in garlic, butter and basil and served with bruschetta and a tomato relish for R25! 

I could, however not stop thinking about the mushrooms and went to Woolworths yesterday to get some exotic mushrooms, which I haven’t eaten since December last year. I was very surprised to see that Woolworths are still selling 2 punnets (400g) of exotic mushrooms at R30.00! This is really a bargain. The mixture contains a combination of fresh shiitake, portabello, king oyster and shimeji mushrooms.

The pot pies are easy to prepare and take less than 30 minutes. It serves 2 people as a main meal or 4 people as a side dish.

Lightly curried lentil and tomato soup

Autumn is definitely my favourite season of the year. I enjoy the moderate temperatures but mostly I love the wonderful colours that autumn brings. 

This soup reminds me of autumn colours. I think I must call it autumn on a plate.

It is quick to prepare and very tasty. Serve it with some crusty bread for a light supper or lunch. It is also a great dish for Meatless Mondays.

It freezes very well and actually tastes better if it is reheated.

Aubergine and bocconcini salad for meatless Mondays

I found the cutest baby Augergines at Checkers a couple of days ago! I was immediately inspired and knew that I would love to make a salad with this; something with cheese! So I went to the cheese counter and saw this mozzarella bocconcini cheese!! Bocconcini and Aubergine, what a delicious combination!

Once at home, I just could not think of anything, so I searched the Internet and found a salad on Real food which inspired this dish! One of the ingredients were fresh basil and the other one fresh mint, which I have plentiful in my herb garden at the moment. Fresh basil in the garden

This was one of the most delicious Vegetarian meals that I have ever eaten! Serve this salad with some French loaf to get the most of the wonderful salad sauce!

Mushroom and lemon risotto for meatless Mondays

I have made Risotto before, without much success. At one stage I really thought that making risotto is way too much effort and I could not understand the hype surrounding this! Well, that was until I have recently eaten a vegetarian risotto at the River Garden restaurant at Lourensford

The risotto was extremely nice and I decided I just have to master this. I have tried a couple of times before mine tasted almost as good. I have realized that making risotto is like learning to ride a bicycle. It takes some time and practice but once you have mastered the technique it is quite an easy thing to do. 

I think the most important thing to remember when making risotto is that you have to use the correct type of rice; Arborio rice is perfect. The next important thing is that it needs your full attention and you must stir and add liquid all the time!
